Easy Frozen Raspberry Pie Recipe

When the weather begins to turn warmer and the days are sunny and bright frozen confections like this scrumptious Frozen Raspberry Chocolate Pie are the perfect cool down. This frozen pie has such a pretty color palette and gorgeous presentation. The pink raspberries provide the perfect backdrop for the pretty pink filling and the chocolate ganache drizzle is the provides contrast, texture and flavor!  Make this pie in advance and serve it at your backyard picnics this year.   • Melt Chocolate – Melt semi sweet chocolate chips and heavy cream into the microwave. Melt on 50% power stirring periodically until completely smooth.
  • Coat the Bottom of the Pie Shell – Pour the melted chocolate into the pie shell and set into the freezer to harden. This will take about 10-15 minutes.
  • Raspberries – Remove the pie shell from the freezer and arrange raspberries on top of the chocolate layer.
  • Filling – Whip the softened mascarpone cheese, raspberry flavoring and powdered sugar until well combined. Add 1 cup of heavy cream and packet of powdered whipped topping mix. Whip together for 4-5 minutes until stiff peaks form.
  • Tint – Add 3-4 drops of red food coloring, lemon zest and a heaping 1/2 cup of the remaining raspberries. Reserve a few raspberries for garnishing. Beat with the mixer until the filling is well blended.
  • Assemble – Pour the filling over the crust then cover and place back into the freezer.
  • Let the pie set up for at least 4 hours for semi-frozen or 8 hours for solid.
  • Chocolate Topping – Melt the remaining chocolate chips and heavy cream in the microwave. Stir until the chocolate chips have melted and the chocolate is completely smooth.
  • Garnish – Drizzle on top of the frozen pie then return to the freezer to allow the chocolate to harden. This will only take approximately 20 minutes.
  • Serve – Cut into the desired pieces and garnish with whipped topping and fresh raspberries.

How to Make the Best Frozen Raspberry Pie Recipe

When making this pie, I wanted to add a special element to the bottom of the pie crust itself so there’s a hidden layer of chocolate inside.  This frozen raspberry pie is a cool down dessert that’s sure to become a favorite with your family and friends.

  • Ingredients you’ll need to make Frozen Raspberry Pie: 9 inch pre-made shortbread pie shell or homemade shortbread crust, semi sweet chocolate chips, heavy cream, fresh raspberries, mascarpone cheese, raspberry flavoring, powdered sugar, dry whipped topping mix i.e. Dream Whip, frozen whipped topping thawed, lemon zest and red food coloring.
  • What is Dream Whip? It’s a dry whipped topping mix that’s been around for eons. You can find it on the baking aisle of most any grocery store including places like Target and Walmart.
  • Don’t skimp on the whipping, it takes time to whip air into the Dream Whip. Use a mixer to whip the filling thoroughly then spread on top of the frozen raspberries.
  • Allow ample time for the filling to freeze so, the  raspberry chocolate pie sets up. Don’t be tempted to cut it too soon. Although, it is tempting.
  • Allow a completely frozen pie to sit on the counter for 20-30 minutes before slicing to make it easier to cut.
  • You can serve this pie partially frozen while it’s still somewhat soft or, make it in advance and freeze it until it’s solid.
  • The filling and fruit addition can be adapted to your preference using whatever fresh fruit is in season.

Ingredients

  • 1 1/2 cups fresh raspberries divided
  • 1 9 inch pre-made shortbread pie shell or homemade shortbread crust i.e. Keebler
  • 1/2 cup semi sweet chocolate chips plus 1/3 cup
  • 4 Tbsp heavy cream divided
  • 8 oz mascarpone cheese softened
  • 1 tsp raspberry flavoring
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 1.3 oz packet dry whipped topping mix i.e. Dream whip
  • 8 oz frozen whipped topping thawed
  • 1 tsp lemon zest [optional]
  • red food coloring

Instructions

  • Wash the raspberries and set them aside to dry.
  • Place 1/2 cup of the semi sweet chocolate chips and 2 tablespoons of heavy cream into the microwave. Melt on 50% power stirring periodically until completely smooth.
  • Pour the melted chocolate into the pie shell and spread. Pop into the freezer for 10-15 minutes.
  • Remove the pie shell from the freezer and arrange 14 [or more] raspberries on top of the chocolate layer.
  • Using a mixer in a medium bowl whip the mascarpone or cream cheese, raspberry flavoring and powdered sugar for 1-2 minutes until well combined.
  • Add 1 cup of heavy cream and the packet of powdered dry whipped topping. Whip together for 4-5 minutes until stiff peaks form.
  • When the filling has reached stiff peak stage add 3-4 drops of red food coloring, lemon zest and a heaping 1/2 cup of the remaining raspberries. Reserve a few raspberries for garnishing.
  • Beat with the mixer until the filling is well blended. Pour the filling over the crust spreading evenly. Cover and place back into the freezer.
  • Let the pie set up for at least 4 hours for semi-frozen or 8 hours for solid.
  • Chocolate Drizzle: Melt the remaining 1/3 cup of chocolate chips and 2 tablespoons of heavy cream in the microwave. Stir until the chocolate chips have melted and the chocolate is completely smooth.
  • Drizzle on top of the frozen pie then return to the freezer to set.
  • To serve cut into the desired pieces and garnish with whipped topping and fresh raspberries. Serve immediately.

Notes

Cream cheese can be substituted for the mascarpone cheese. If you freeze the pie longer than 4-6 hours before serving, I recommend allowing it to thaw for around 20 minutes on the counter. This will give it time to soften and the pie will be easier to cut.
