Easy Coca Cola Pot Roast Recipe

This Coca-Cola pot roast takes me back to my Sunday dinner roots. To make a pot roast in a crockpot, you’re certain to have a tender and succulent meal to enjoy. Rub the pot roast on all sides with oil, then season with steak seasoning. Center it in the crockpot then arrange the carrot and onion wedges around the edge of the roast. Drizzle Worcestershire sauce on top. In a small bowl whisk together the Coca cola with the gravy mix and herbes de provence until dissolved.   • Prepare Crockpot – Spray the inside of the slow cooker with cooking spray.
  • Chuck Roast – Drizzle roast with olive oil then rub with steak seasoning, black pepper and minced garlic on all sides. Center in the slow cooker.
  • Vegetables – Arrange the carrots and onion wedges around the roast placing a few onion wedges on top. Drizzle the Worcestershire sauce over the roast.
  • Sauce – Mix together the coca cola, brown gravy mix and Herbes de Provence until dissolved. Pour over the roast and vegetables. If adding potatoes, arrange the potato halves on top and season.
  • Lock Lid in Place – Cook on low for 8-10 hours.
  • Gravy – Remove the roast and vegetables from the slow cooker to a platter. Cover and keep warm.
  • Pour the drippings into a saucepan, skimming any excess fat from the top.
  • Thicken with cornstarch slurry to make the gravy.

How to Make the Best Coca Cola Pot Roast

  • Ingredients you’ll need to make homemade Coca Cola Pot Roast: One 4 pound chuck roast, Coca Cola, carrots, onion, olive oil, steak seasoning, black pepper, garlic, herbes de provence, Worcestershire sauce, one packet herb gravy or brown gravy mix and golden or russet potatoes.
  • Kitchen gadgets you’ll need: A 6 quart or similar size slow cooker, sharp knife and cutting board, vegetable peeler, small bowl, whisk, measuring cups and spoons.
  • This recipe is designed to be made with full sugar Coke. You can adapt using sugar free if that’s your preference.
  • Steak seasoning comes in many flavors. Montreal or Chicago are the most readily available. It’s important to use a really good one as it’s a main seasoning for the roast in this recipe. Keep in mind that the gravy mix will also add sodium so adjust the amount depending on the sodium content of the seasoning used.
  • You can use one pound of baby carrots in place of peeled carrots.
  • You could omit the cubed potatoes if you prefer mashed potatoes alongside pot roast.
  • At the end of cooking, you can remove the roast and vegetables to a platter and add 1 or 2 teaspoons of Kitchen Bouquet browning sauce to the drippings to add color to the gravy.
  • Side dishes to serve with pot roast: Since there are vegetables cooked right along with the roast, you may like to make a Seven Layer Salad in advance for a timesaver. You may also like to make a batch of  No Knead Yeast Rolls.
  • Store Coca Cola Pot Roast chilled in the refrigerator for up to 3 days. Reheat gently in single servings in the microwave or in a saucepan over medium heat. Add the gravy or a small amount of beef stock for moisture.

Ingredients

  • 1 4 lb chuck roast
  • 1 Tbsp olive oil
  • 1-2 Tbsp steak seasoning
  • 1/2-1 tsp black pepper
  • 4 clove garlic minced
  • 1/4 cup Worcestershire sauce
  • 1 lb carrots peeled and cut on the bias
  • 1 large sweet onion cut into wedges
  • 1 12 oz can coca cola
  • 1 1.0 oz package herb gravy for beef or brown gravy mix
  • 1 tsp Herbes de Provence
  • 2 lb medium Yukon Gold or russet potatoes halved [optional]
  • 2 Tbsp cornstarch and cold water

Instructions

  • Spray the inside of the slow cooker with cooking spray. Drizzle the roast with olive oil then rub with steak seasoning, black pepper and minced garlic on all sides. Center in the slow cooker.
  • Arrange the carrots and onion wedges around the roast placing a few onion wedges on top. Drizzle the Worcestershire sauce over the roast.
  • In a small bowl whisk together the coca cola, brown gravy mix and Herbes de Provence until dissolved. Pour over the roast and vegetables. If adding potatoes, arrange the potato halves on top.
  • Season the vegetables with a light sprinkle of steak seasoning or seasoned salt and black pepper to your taste.
  • Lock lid in place and cook on low for 8-10 hours.
  • Gravy: Use a slotted spoon to remove the roast and vegetables from the slow cooker to a platter. Cover and keep warm.
  • Pour the drippings into a saucepan skimming any excess fat from the top.
  • Dissolve 2 Tbsp cornstarch in just enough cold water (or milk) to dissolve. Bring drippings to a boil then whisk in the slurry. Simmer just until thickened then serve drizzled over the roast.

Notes

  • At the end of cooking, you can remove the roast and vegetables to a platter and add 1 or 2 teaspoons of Kitchen Bouquet browning sauce to the drippings to add color to the gravy.

    I followed this recipe to the tee, except i had no packet of dry beef gravy so used a jar of beef gravy,
    otherwise had all the other ingredients. The vegetables turned out good, but the roast chuck beef turned out to tough and chewing it to death was not fun. I had it in a slow cooker for almost nine hours and although the meat fell apart when I served it, it was just to chewy to eat. I plan to put the beef into a food processor and make a lot of beef pate. What else could I do? Can you tell me why the beef which was very expensive did not become tender to eat?

    1. I’m not certain why the chuck roast you got wasn’t a good one. At 9 hours it certainly wasn’t overcooked, if that’s what you’re asking. I’ve cooked chuck roast in a slow cooker for as long as 10 hours more than once. It could be how it the actual meat was butchered not the instructions in this recipe.

    When a roast is made in our house, the ketchup is usually asked for. This roast… No One asked for the ketchup!!!!! Definitely a win!!!!

  3. This “old-time recipe brings back a lot of good memories when I cooked this all the time in the 80s. If you like sauerkraut, use a pork roast on top of kraut, dry onion soup on top and just a smidge of water (about an1/8 cup. I also add a little garlic…..optional. great site

    1. Generally speaking it should take 1/2 the time. It can depend on your slow cooker, though. Older slow cookers cook slower, newer slow cooker cook faster.
