  • Ingredients you’ll need to make Toasted Coconut: Sweetened shredded coconut, any amount
  • Kitchen tools: 1 nonstick coated pan.
  • You can use toasted coconut immediately after cooling or store it in an airtight container for up to 3 days.
  • Pour the coconut into the non stick pan and turn the heat to medium high.
  • Allow the coconut to sit in the pan until the heat comes up to temperature. You’ll begin to see slight browning and you’ll smell the sugar on the coconut beginning to caramelize. It may also make a popping sound.
  • Begin to stir the coconut keeping it moving constantly. You should then lower the heat to medium stirring constantly. You may need to lift the pan from the heat from time to time to avoid burning.
  • Continue this process for 3-4 minutes until the coconut is toasted to your taste then remove it from the heat.
  • Spread the coconut on a paper towel or parchment paper to cool thoroughly before using.

  1. Your recipe calls for salted butter in the cake and does not specify salted or unsalted in the frosting. Should I add salt if I only have unsaltedbutter?

    1. A pinch of salt is always a good idea so, yes. Butter either salted or unsalted will work in any recipe but, I typically have salted on hand. Please feel free to use unsalted if you have it and add a pinch of salt to accommodate.

  2. I’ve made this cake twice since finding your recipe last month and I love it!!! I took it to a church gathering and it was gone in minutes with everyone wanting more! It is a bit time consuming but soooo worth it!
