7UP Biscuit Cinnamon Rolls

These easy 7UP Biscuit Cinnamon Rolls are a cinch to make using prepared baking mix. Combined with 7UP, sour cream, brown sugar, plenty of sweet cream butter and warm spicy cinnamon. The texture of the dough is biscuit-like, tender and utterly delicious. Serve them for a breakfast, brunch or tea time treat for any occasion, or just because. Any excuse will do.

Easy 7UP Biscuit Cinnamon Rolls Recipe

Making baked goods using novelty ingredients is a fun change of pace once in a while. It’s completely unexpected to see 7UP in a bread recipe, but it gives an incredible flavor to these cinnamon rolls and the fizz enhances the rise. Classic cinnamon rolls are typically made using yeast and require rest time to rise. These cinnamon rolls require no rise time at all, you make them, cut the dough into portions then bake. Because of the difference in the dough texture from a typical cinnamon roll, expect these cinnamon rolls to be more homestyle or imperfect in shape.   • Combine Ingredients – Mix together the biscuit mix, 7UP®and sour cream until it forms a soft dough.
  • Turn Dough onto Surface – Flour a non-stick surface with additional baking mix. Turn dough out onto the surface and turn until coated with baking mix and not sticky. Add more in small amounts as needed.
  • Flatten Dough – Roll or press dough into a 12 x 14-inch rectangle. 
  • Assemble – Spread softened butter evenly over dough from end to end. Sprinkle with cinnamon and sugar mixture.
  • Roll Dough – Begin to roll from the longest edge jelly roll-style ending seam side down. Use a sharp knife to cut into 12 equal pieces.
  • Bake – Arrange side by side in skillet. Bake for 22-25 minutes or until golden. 
  • Glaze – In a small mixing bowl cream together the cream cheese with butter. Lower the speed of the mixer and gradually add the powdered sugar and milk 1 Tbsp at a time just until spreading consistency.  Spread on warm rolls after baking.

How to Make the BEST 7Up Biscuit Cinnamon Roll Biscuits

  • Ingredients you’ll need to make homemade 7Up Biscuit Cinnamon Rolls: Biscuit baking mix i.e. Bisquick or similar, 7Up, softened butter, sour cream, light brown sugar, ground cinnamon, light brown sugar, cream cheese, powdered sugar and milk to make the glaze.
  • Kitchen tools you’ll need: One medium bowl, small bowl, hand mixer, measuring cups and spoons, offset icing spatula or knife, 10 inch cast iron skillet and sharp knife.
  • Be patient when rolling the dough and have extra baking mix nearby to “flour” hands, rolling surface and everything that touches the dough to help with sticking.
  • After cutting the dough into pieces it’s perfectly fine to reshape if needed, before arranging in the skillet.
  • You can also use unflavored dental floss to cut the dough into rounds.
  • While 7UP works best for these cinnamon rolls,  ginger ale can be used in a pinch. Should you choose to do so, please note that the flavor will be slightly different.
  • Store baked 7Up Cinnamon Roll Biscuits chilled in the refrigerator for up to 3 days. Reheat gently in the microwave.

Ingredients

  • 1/2 cup softened butter
  • 3 cups biscuit baking mix i.e. Bisquick or similar plus additional for dusting
  • 1/2 cup 7UP® room temperature
  • 1/2 cup sour cream
  • 3/4 cup light brown sugar lightly packed
  • 2 Tbsp ground cinnamon
  • 2 oz cream cheese softened
  • 2 Tbsp butter softened
  • 1 1/2 cup powdered sugar
  • milk as needed to thin

Instructions

  • Preheat oven to 350°F. Brush the bottom and sides of a 10-inch cast iron skillet or similar with 1 tsp of softened butter. Set aside.
  • Dough: In a medium size mixing bowl mix together the biscuit mix, 7UP®and sour cream until it forms a soft dough.
  • Flour a non-stick surface with additional baking mix. Turn dough out onto the surface and turn until coated with baking mix and not sticky. Add more in small amounts as needed. Roll or press dough into a 12 x 14-inch rectangle. 
  • Spread remaining softened butter evenly over dough from end to end. 
  • Cinnamon Sugar: In a small bowl, mix together the brown sugar and cinnamon. Sprinkle evenly over butter.
  • Begin to roll from the longest edge jellyroll-style ending seam side down. Use a sharp knife to cut into 12 equal pieces.
  • Bake: Arrange in skillet. Bake for 22-25 minutes or until golden. 
  • Glaze: Meanwhile, in a medium mixing bowl using an electric mixer cream together the cream cheese with 2 Tbsp butter. Lower the speed of the mixer and gradually add the powdered sugar. Add milk 1 Tbsp at a time just until spreading consistency. 
  • Spread glaze on warm rolls after baking.

  1. This sounds good. I make 7 up biscuits often and love them. FYI, at times I haven’t had a lemon-lime soda on hand but did have lime flavored sparkling water on hand and it worked well.

    Hi there! We’ve made these so many times and they are incredible!! Best cinnamon rolls ever! I’d love some advice though. Have you ever made them ahead of time and have tips for that? At which point would/could I pause and then bake again right before I want to serve them?? Basically, I want to serve them on Thursday night but don’t have time that afternoon to prepare them, ideally, I’d like to make them tomorrow instead (Wednesday).

    1. You can assemble these then cover with plastic wrap and chill. Bring to room temperature and bake when you’re ready. You may need to adjust the baking time just a bit they may take longer to bake.

    I just made this today. It was very messy during rolling up . But end up very nicely looks real Cinnamon Roll .
    And taste are lighter than yeast bread roll. I was using Cake mix instead Bisquick. Came out very good ! But because I did substitute that’s why not so much full enough on 10 inch Cast iron ? or what ? Should I maybe put some more Baking Powder…….I’m wondering….

    1. Cake mix would yield a very different result from biscuit mix as it already has sugar in it, likely the reason it was messy and didn’t fill your skillet.
