I’d like to introduce you to my foodie sister and dear friend, Sherri. Sherri and I met when I won the National Flour Power! Baking Competition in 2012. Part of my winning was to attend a live Showcase event held in Franklin Tennessee where I recreated my winning cake in front of a large audience of cooks, bakers and chefs. Sherri, was the emcee of the event, as a previous winner with her “Smokin’ Baby Got Back Ribs.”  What a fun and unforgettable day we had on the day of the Showcase event. Sherri is an award winning cook whose appeared on the Today Show as well as Food Network multiple times and I’m delighted she’s shared this recipe with us!

How to Make the Best Brown Butter Lima Beans with Ham

  • Ingredients you’ll need to make homemade Brown Butter Lima Beans with Ham: Baby lima beans, butter, ham, shallot, beau monde seasoning or seasoned salt, black pepper and fresh chives.
  • Kitchen tools you’ll need: A large skillet, sharp knife and cutting board, spoon for stirring, measuring cups and spoons.
  • To make brown butter, salted or unsalted butter is simmered on the stovetop until the milk solids are toasted. This process takes patience but the nutty flavor that it imparts is the key to the flavor of these baby lima beans.
  • When making this recipe, pull the lima beans from the freezer and let them sit at room temperature while you make the butter to thaw slightly.
  • Depending on how vigorously the beans simmer. They could take a shorter or longer cooking time to become tender. Adjust accordingly, the end result we’re shooting for here is fork tender lima beans.
  • You could garnished with green onion in place of shallots, if preferred.
  • What is beau monde seasoning? It’s a blend of spices and seasonings commonly used in Creole and Cajun cooking. Seasoned salt will work in a pinch.
  • Store cooked Brown Butter Lima Beans chilled in the refrigerator for up to one week. Reheat in a saucepan on the stovetop over medium heat or in single servings in the microwave.

Ingredients

  • 4 Tbsp butter unsalted-may use more if you prefer
  • 1 medium shallot sliced thin
  • 1/3 lb cooked ham on bone rough chopped
  • 16 oz package frozen baby lima beans
  • 1 tsp beau monde seasoning or seasoning salt adjust to taste
  • 1/2 tsp course black pepper
  • 2 pinches crushed red pepper flakes optional
  • chopped fresh chives to garnish

Instructions

  • Add butter to a large skillet on medium high heat. Whisk butter frequently to prevent burning. Cook for 6-8 minutes or until golden brown and nutty. Reduce heat.
  • Add shallots to skillet and saute for 1 minute. To the skillet add ham continue to saute for another minute.
  • Add the lima beans and remaining seasoning to pan. Lower heat and simmer for 15 minutes or until the lima beans are fork tender.
  • Garnish with chopped fresh chives and serve.
