Mexican Beef Sliders and Tomatilla Sauce

These beefy Mexican Beef Sliders and Tomatilla Sauce are a festive way to shake-up your South-of-the-Border inspired burger menu. Whether you choose to serve them for a quick meal or a fun twist on grilled backyard cheeseburgers, they’re sure to be gone in a snap. The fresh tomatilla sauce kicks-up the flavor profile and makes them irresistible.

Easy Mexican Beef Sliders and Tomatilla Sauce Recipe

These sliders are made using frozen dinner rolls as the buns. They can certainly be adapted using any slider roll that you prefer. They’re a fun twist for a busy day meal option or kicked-up game day eats and my boys think it’s kinda fun to build them on freshly  baked yeast rolls in place of buns. The roasted poblano peppers add a true depth of flavor to the beef in the slider patties. How to make Mexican Beef Sliders: (Scroll down for full printable recipe.)

  • Rolls – Bake the rolls per the package instructions then set aside.
  • Tomatillos – Move the oven rack to the highest position and set on broil. Brush the peppers with olive oil. Broil in the oven until slightly black, using tongs to carefully turn as needed. Remove the seeds and charred skin. Chop the peppers into small pieces.
  • Ground Beef Mixture – Combine the chopped peppers, taco seasoning, cumin, salt and black pepper with the ground beef.
  • Form Patties – Make 8 rounded, 3-inch patties out of the ground beef mixture.
  • Cook – Fry the patties in a skillet or grill for 3-4 minutes per side or until your desired doneness. Top with shredded cheese during the last minute of cooking to melt.
  • Salsa – Combine tomatillos, jalapeno, onion, cilantro, lime peel and juice, honey and garlic cloves in a stand blender until smooth. Season with salt and black pepper to taste.
  • Assemble – Slice the baked rolls, then assemble the sliders beginning with a slice of red onion using as much of the green sauce as desired on top or under the meat.

How to Make the Best Mexican Beef Sliders

If you’ve never made your own fresh tomatillo sauce, you’ll enjoy it as it adds such a nice twist to the expected garnishes you associate with burgers and it packs a sweet and spicy twist.

  • Ingredients you’ll need to make Mexican Beef Sliders with Tomatilla Sauce: Unbaked frozen dinner rolls or baked slider rolls, lean ground beef, 2 medium poblanos, olive oil, taco seasoning, ground cumin, salt and black pepper or lemon pepper. If time is an issue, warmed slider rolls found in the grocery store bread section will work perfectly.
  • For the tomatilla sauce you’ll need: 4 tomatillas, onion, cilantro, one jalapeno pepper, poblano peppers, lime juice and zest, salt, honey and garlic.
  • You’ll also need sliced onion and cheese slices for the tops. You can use colby jack, pepper jack or cheddar cheese it’s fine to use your favorite.
  • Kitchen gadgets you’ll need: Mixing bowls, a cheese grater, large silicone spoon for mixing, a sheet pan to roast the ingredients for the tomatilla sauce, a stand blender or food processor, measuring cups and spoons. You’ll also need a sharp knife and a chopping board. You can also grill these sliders or fry in a grill pan.
  • I prepared these sliders with ground beef, but ground chorizo, ground  turkey or ground chicken would work well, too.

  • You can make the tomatilla sauce in advance and chill in the refrigerator until serving.
  • You can also mix up the ground beef mixture, cover and chill until you’re ready to form into patties for grilling.
  • Store leftover Mexican Beef Sliders in the refrigerator for up to 2 days. Reheat gently in the microwave and drizzle with tomatilla sauce just before serving.

Ingredients

  • 8 frozen unbaked dinner yeast rolls (i.e. Rhodes) baked according to package instructions
  • 1 1/2 pounds lean ground beef
  • 2 medium poblano or green bell peppers
  • olive oil
  • 1 Tbsp taco seasoning
  • 1 1/2 teaspoons cumin
  • salt and black pepper to taste
  • 1 cup shredded Monterey-Jack or sharp cheddar cheese
  • Tomatillo Sauce:
  • 4 small tomatillos remove husks and chop
  • 1 jalapeno pepper chopped
  • 1/2 medium white onion chopped
  • 1/2 cup cilantro leaves chopped
  • zested peel and juice of 1 lime
  • 2 Tbsp honey
  • 2 clove garlic
  • salt and black pepper to taste
  • 8 red onion slices
