Easy Peanut Butter Popcorn Bites

These chewy popcorn bites ae a delicious option for your holiday goodies, family movie night or game day snacking. How to make Peanut Butter Popcorn Bites: (Scroll down for full printable recipe.)

  • Popcorn – In a large mixing bowl, mix together the popcorn and peanuts. 
  • Coating – In a heavy bottomed saucepan melt together butter, peanut butter chips and marshmallows. Stir constantly over low heat until completely melted and heated through.
  • Remove from the heat and add vanilla.
  • Combine – Pour the peanut butter marshmallow coating over the popcorn and peanuts. Stir with a non stick spatula until the popcorn and peanuts are completely coated.
  • Transfer to Dish Press into a buttered dish.
  • Cool – Cool completely on the counter for 2 hours or until the bottom of the dish is cool to the touch before cutting.
  • Ganache – Melt chocolate chips with heavy cream in a microwave safe bowl in 20 second increments until smooth, stopping to stir each time. Repeat until smooth.  
  • Cut into Squares – Line a baking sheet, with wax paper. Cut the peanut butter popcorn into 24 [2] inch squares or 48 [1] inch squares. Place onto the wax paper.
  • Drizzle the squares with the warm ganache and sprinkle each with chopped peanuts.
  • Cool completely. Store tightly covered at room temperature

  • Ingredients you’ll need to make Peanut Butter Popcorn Bites: Salted butter flavored popcorn (approximately 8-9 cups total), salted cocktail peanuts, butter, peanut butter chips, mini marshmallows, vanilla, milk or semi sweet or dark chocolate chips, heavy cream and cocktail peanuts.
  • Kitchen tools you’ll need: 13×9 inch baking pan, measuring cups and spoons, saucepan, sharp knife and cutting board, small bowl, measuring cups and spoons.
  • You can use creamy or chunky peanut butter for this recipe. If you use chunky peanut butter omit the peanuts form the coating.
  • This popcorn goodness could also be adapted and turned into popcorn balls that can be decorated with seasonal sprinkles and candy to create Monsters for Halloween or ornaments for Christmas. Popcorn is consummate snack food and can be enjoyed either savory of sweet.
  • Drizzling these popcorn squares with chocolate is optional but it adds so much to the overall flavor. A sprinkle of chopped peanuts seal the deal.

Ingredients

  • 2 quart salted butter flavored popcorn [approximately 8-9 cups total]
  • 2 cup salted cocktail peanuts
  • 1/2 cup butter 1 stick
  • 1 10 oz bag peanut butter chips
  • 1 10.5 oz bag mini marshmallows
  • 2 tsp pure vanilla
  • Ganache:
  • 1 1/2 cup milk or semi sweet or dark chocolate chips [your preference]
  • 1/2 cup heavy cream
  • 1/2 cup finely chopped cocktail peanuts [optional]

Instructions

  • In a large mixing bowl mix together the popcorn and peanuts. 
  • In a heavy bottomed saucepan melt together butter, peanut butter chips and marshmallows. Stir constantly over low heat until completely melted and heated through.
  • Remove from the heat and add vanilla.

  • Press into a buttered 13×9 inch dish. Cool completely on the counter for 2 hours or until the bottom of the dish is cool to the touch before cutting.
  • Ganache: Melt 1 1/2 cups chocolate chips with heavy cream in a microwave safe bowl in 20 second increments until smooth, stopping to stir each time. Repeat until smooth.
