This recipe for Pork Tips Stroganoff with Mushrooms and Onion is a bit of a twist on beef stroganoff. I often find myself doing a lot of nostalgic cooking. By that I mean, I like to prepare comforting dishes that are similar to the kinds of recipes I grew-up on. This pork stroganoff is a riff on classic beef stroganoff that’s simply delicious. How to make Pork Stroganoff Recipe: (Scroll down for full printable recipe.)

  • Bacon – Cook the bacon until crispy. Reserve drippings.
  • Pork – Sprinkle the steak seasoning and lemon pepper over the pork, stir to coat. Cook over medium-high heat until browned on both sides and no pink remains. Remove to a platter and keep warm.
  • Vegetables – Cook mushrooms and onion seasoned with garlic salt and black pepper until softened then add the minced garlic. Cook for 1 minute longer scraping any brown bits on the bottom of the pan.
  • Sauc – Add the chicken stock, tarragon, Worcestershire sauce, paprika and pork tips back to the skillet. Stir well and bring to a boil.
  • Sour Cream – Mix the sour cream and flour together. Add to the skillet and stir until fully incorporated and the sauce is beginning to thicken. Add 1/2 of the crumbled bacon. Stir well.
  • Serve – Remove from the stovetop and serve immediately over mashed potatoes, buttered rice or cooked fettuccine garnished with crumbled bacon and chopped chives.

How to Make the Best Pork Tips Stroganoff Recipe

What are pork tips? Pork tips are small cubed pieces of pork loin, tenderloin or pork chops. Much like sirloin tips they’re basically small bite size pieces of sirloin steak. While this recipe is a bit of a riff on beef stroganoff it’s jut as comforting. Comfort food like this pork stroganoff dish is always a happy sight to see on the dinner table.

  • Ingredients you’ll need to make homemade Pork Tips Stroganoff: Pork loin, bacon, all purpose flour, baby bella mushrooms, onion, steak seasoning, lemon pepper, black pepper, butter, chicken stock or broth, tarragon, worcestershire sauce, sour cream, smoked paprika and mashed potatoes and fresh chives for serving.
  • Kitchen gadgets you’ll need: A large skillet, whisk, silicone spoon or spatula, measuring cups and spoons, a sharp knife and chopping board and small bowl to mix together the sour cream and flour plus a spoon or small whisk to stir.
  • What are Pork Tips? I use pork loin in this recipe for pork stroganoff that’s been cut into bite sized cubes. You could use boneless pork chops or pork tenderloin either one would work.
  • It’s important to use a good steak seasoning for optimum flavor. It’s perfectly fine for you to use one that you already enjoy to season the pork.
  • If you prefer a different variety of mushrooms you can easily adapt using the same amount called for.
  • I enjoy serving this on a bed of mashed potatoes, but you can serve it over rice or pasta, it’s your call.
  • Store leftover Pork Tips Stroganoff chilled in the refrigerator for up to 3 days. Reheat gently in the microwave or in a saucepan over medium heat.

Ingredients

  • 6 slices bacon
  • 2 1/2 lbs pork loin tips bite size pieces
  • 2 tsp Montreal steak seasoning Or your favorite
  • 1 tsp lemon pepper
  • 1 8 oz container sliced baby Portabella mushrooms
  • 1 large sweet onion diced
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • 2 garlic cloves minced
  • 2 Tbsp butter divided
  • 2 cups chicken broth
  • 1 tsp dry tarragon
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1 8 oz container light or full fat sour cream
  • 4 Tbsp all purpose flour
  • Prepared mashed potatoes Or 1 lb cooked fettuccine noodles
  • 2 Tbsp fresh chopped chives for garnishing

Instructions

  • In a large dutch oven or heavy bottomed skillet cook the bacon until crispy. Remove to a paper towel to drain then crumble. Remove all but 2 Tbsp drippings from the skillet.
  • Add 1 Tbsp butter and the pork tips to the skillet. Sprinkle the steak seasoning and lemon pepper over the pork, stir to coat. Cook over medium-high heat for 6-8 minutes or until browned on both sides and no pink remains. Remove to a platter and keep warm.
  • Add 1 Tbsp butter, sliced mushrooms and onion to the skillet and season with garlic salt and black pepper. Cook until softened and beginning to brown about 3-5 minutes then add the minced garlic. Cook for 1 minute longer scraping any brown bits on the bottom of the pan.
  • Add the chicken stock, tarragon, Worcestershire sauce, paprika and pork tips back to the skillet. Stir well and bring to a boil.
  • Mix the sour cream and flour together. Add to the skillet and stir until fully incorporated and the sauce is beginning to thicken. Cook for 3-5 minutes over medium, stirring to prevent sticking.
  • Add 1/2 of the crumbled bacon. Stir well.
  • Remove from the stovetop and serve immediately over mashed potatoes, buttered rice or cooked fettuccine garnished with crumbled bacon and chopped chives.

    This was delicious, the whole family liked it!
    Grocery store had pork tenderloin tips on sale so I got some, but hard to find a recipe for them. I think they cut the ends off the tenderloins to make them a certain size and these are left. This worked great!
    My diet is supposed to avoid fatty food so I used olive oil and skipped the bacon, and substitute something for the sour cream. Cream of mushroom soup worked but might try to find nonfat sour cream or yogurt next time.

    This is my families favorite pork dish. I don’t think of myself as a great cook, but this receipe makes me look good. lol I love the robust flavor that comes through when it is all put together at the end.     This is one of the most delectable recipes I have found in quite some time. I halved the recipe and there was still enough for my husband and me to have two meals. I served the stroganoff over narrow noodles. My husband, who makes “the best” beef stroganoff was totally impressed with the layers of flavor and the silkiness of the sauce. I especially like the idea of mixing flour into the sour cream and mixing both into the sauce. I think that decreases the propensity for a “breaking sauce”. I used all the spices indicated in the recipe and also added a healthy tsp. of Mrs. Dash Original seasoning. I didn’t have pork tips, so (as you suggested) I used a small pork tenderloin. This recipe is definitely a “keeper”. Thank you for sharing with your readers.

  5. In a move quite unusual for me, I followed this recipe exactly! It was delicious! I might suggest that you specify unsalted butter. Between the garlic salt and lemon pepper and salted butter, the dish was only slightly more salty for my taste.

    That was so amazing, Usually I ‘m making beef stroganoff with Pasta or butter Rice.
    But when I made this, it was sooooooooo good !! Especially Mashed Potatoes on that ! And I have no idea with Pork !
