Easy Skillet Potato Hash with Baked Eggs Recipe
This skillet meal is one that an be served at any time of day. You can enjoy it as a breakfast for dinner entree and it comes together in minutes using simple basic pantry ingredients. How to make Skillet Potato Hash with Baked Eggs: (Scroll down for full printable recipe.)
- Skillet – Preheat the oven to 425°F. Drizzle a 12 inch cast iron or oven safe skillet with oil adding 2 Tbsp butter or bacon drippings, over medium-high heat.
- Potatoes Add potatoes to the skillet. Season with seasoned salt or creole seasoning and black pepper. Cook until the potatoes are browning and are just fork tender, about 10-12 minutes.
- Vegetables – To the skillet add red onion, bell pepper and mushrooms.
- Simmer – Cook for another 3 minutes until they begin to soften and brown. Sprinkle cooked bacon, sausage or diced ham over the potatoes. (Depending on what you choose to use.)
- Eggs – Crack the eggs on top. Drizzle each egg with 1 teaspoon of heavy cream or melted butter.
- Season the eggs to your taste with salt and pepper. Sprinkle with grated Parmesan cheese, or your favorite finely grated cheese.
- Transfer to the Oven – Place into the oven and bake for 7-10 minutes depending on how firm you want the eggs.
- Remove from the oven, sprinkle with parsley and serve immediately.

- You can use any variety of potatoes in this recipe.
- You can omit mushrooms and use any bell pepper that you like. You could even use poblano or jalapeno.
- The ingredients and seasonings can be adapted depending on what you have on hand. If you don’t care for mushrooms or bell pepper, omit them. If you’d like to finish it with more shredded cheese, go right ahead. The ingredients can vary according to your taste or diet.

Made this this morning since my husband will be working 16 hours today and I wanted to give him a good breakfast meal to start him off. Very good, I do not like my eggs with a wet yolk, so I put my eggs near the sides of the pan (cast iron) in order for them to cook more thoroughly :)These are ingredients I would use, but never thought of putting them in a bake together!
