Easy Slow Cooked French Dip Recipe

There isn’t one season of the year that I don’t use my slow cooker, I use it year-round. There’s nothing like coming home after a busy day and having the house filled with the smell of supper ready and waiting to be enjoyed, it’s fabulous. At the holidays, I use it for pineapple brown sugar glazed ham and Dr Pepper barbecue beef for sandwiches during the week. I make classic chuck roast and vegetables in my slow cooker all of the time, as I’m sure many of you do. It’s a natural transition to use a similar technique for making a slow cooked french dip sandwich. How to make Slow Cooked French Dip: (Scroll down for full printable recipe.)

  • Season – Drizzle the roast on all sides with olive oil. Rub with steak seasoning and minced garlic on all sides. (You can adjust the amount of steak seasoning to taste.)
  • Sear – Heat a few drizzles of olive oil in a large skillet and sear the roast for 2 minutes on all sides.
  • Onions – Spray the slow cooker with cooking spray and arrange the sliced onion on the bottom. Center the roast on top of the onion. Drizzle the Worcestershire sauce over the roast.
  • Au Jus – Add the beef broth, bay leaf and thyme to the same skillet used for searing the beef. Cook over medium high just to deglaze the pan scraping any brown bits from the bottom of the pan. Pour the broth over the roast in the slow cooker.
  • Slow Cook – Cover and cook on low for for 8-10 hours or until the meat is falling apart tender.
  • Remove the roast from the slow cooker and slice or shred the meat removing visible fat.
  • Use a large spoon to skim the fat from the top of the jus. After slicing or shredding the roast, return the meat to the jus and keep warm until serving.
  • Assemble: Slice the rolls and butter. Toast in the oven under the broiler. You can season the rolls with garlic salt, if desired. Once toasted, fill the hoagie rolls with beef and onions, then cover with 2 slices of provolone cheese placing back under the broiler to melt.
  • Serve immediately with the au jus for dipping.

How to Make the BEST Slow Cooked French Dip Recipe

  • Ingredients you’ll need to make homemade Slow Cooked French Dip: One 4 pound chuck roast, steak seasoning i.e. Kansas City, Chicago, Montreal use your favorite, garlic, olive oil, Worcestershire sauce, beef broth or french onion soup, sweet onion, fresh thyme, bay leaf, s Provolone cheese and french baguettes or kaiser rolls.
  • I highly recommend taking the time to sear the seasoning onto the beef prior to placing it into the slow cooker to simmer all day. It adds a layer of flavor.
  • The best steak seasoning to use is the one that you enjoy most. It’s a crucial part to the overall flavor. I have used Kansas City, Montreal and Chicago steak seasonings all of which are easy find on the spice aisle of most grocery stores.
  • After assembling the roast into the crock, you can voer and chill overnight for a timesaver. This will only work if the crock is removable and you should allow it to warm on the counter prior to placing it into the slow cooker and heating.
  • Store the beef for Slow Cooked French Dips chilled in the refrigerator for up to 3 days.
  • Reheat in a saucepan over medium heat with the juices and assemble the sandwich fresh.

    1. It’s at the bottom. If his diet is restrictive, you should use only as a guideline. There are oodles of nutritional calculators online and many are free to use.
