116 inchfrench baguettesliced into 16 even portions
olive oil
1lbmedium shrimppeeled and deveined and roughly chopped
1/3cupdiced red bell pepper
6mediumgreen onionsthinly sliced
1tspseafood seasoning i.e. Old Bay or Seafood Magic
1tspgranulated garlic
1/2tspsalt
1/2tsplemon pepper
4ozchive and onion cream cheesesoftened
few dashes hot sauce
1 1/2cupshredded colby jack cheesedivided use
1/4cupshredded Parmesan cheese
smoked paprikafor dusting the tops
Instructions
Preheat oven to broil setting. Brush a large sheet pan with oil or spray with cooking spray.
Brush both sides of bread with olive oil. Arrange baguette slices on pan. Broil for 2-3 minutes per side or just until toasted.
Meanwhile, In a skillet heat a drizzle of olive oil. Add red bell pepper and green onion. Cook over medium-high heat for 2 minutes or just until beginning to soften. (Reserve some green onion for garnishing.)
To the skillet add the shrimp. Cook for 2 minutes until shrimp is fully cooked then add seafood seasoning, granulated garlic, salt and lemon pepper. Mix thoroughly, then add cream cheese, 1/2 cup colby jack cheese, Parmesan cheese and a few dashes of hot sauce.
Turn the heat off and mix until fully combined. Remove from heat.
Divide shrimp mixture evenly between baguette slices and top with reserved shredded colby jack cheese. Dust tops with paprika.
Lower oven to 400°F. Bake for 8-10 minutes or just until tops are golden and cheese has melted. Broil at the end to brown further, if desired.
