Turkey Broccoli And Rice Divan

Ingredients

  • Filling:
  • 3 cups cooked yellow rice
  • 3 cups roasted turkey roughly chopped
  • 1 [10 3/4 oz] can cream of chicken with herbs soup
  • 1 [10 3/4 oz] broccoli cheese soup
  • 1 [12 oz] can evaporated milk
  • 1/2 cup mayonnaise
  • 1 [2 oz] jar diced pimentos drained
  • 4 green onions thinly sliced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp curry powder [more or less to taste]
  • 2 cups sharp cheddar cheese divided
  • 2 cups fresh broccoli florets steamed
  • Topping:
  • 1 cup panko breadcrumbs
  • 2 Tbsp butter melted

Instructions

  • Preheat the oven to 350°F and spray a 9 x 13 baking dish with cooking spray. Or, you can bake this casserole in [6] individual [6-8 oz] casseroles.
  • In a large mixing bowl, stir the filling ingredients together, reserving 1/2 of the shredded cheddar cheese for the top.
  • Pour into the baking dish.
  • Sprinkle the top with the remaining shredded cheese.
  • Toss the panko breadcrumbs with melted butter and sprinkle evenly on top.
  • Bake for 30-35 minutes until the topping is golden and the filling is bubbly around the edges.
