Pour the coconut into the non stick pan and turn the heat to medium high.
Allow the coconut to sit in the pan until the heat comes up to temperature. You'll begin to see slight browning and you'll smell the sugar on the coconut beginning to caramelize. It may also make a popping sound.
Begin to stir the coconut keeping it moving constantly. You should then lower the heat to medium stirring constantly. You may need to lift the pan from the heat from time to time to avoid burning.
Continue this process for 3-4 minutes until the coconut is toasted to your taste then remove it from the heat.
Spread the coconut on a paper towel or parchment paper to cool thoroughly before using.
