Spray a 6 quart slow cooker with cooking spray and set it on low.
In a stove top pan, cook the bacon until crisp, then crumble and set aside. Reserve 2 Tbsp drippings in pan. Add onion and peppers to drippings. Cook over medium high for 2-3 minutes, Add garlic, cook for 1 minute longer. Remove from heat.
Cook the onions and peppers in 2 tablespoons of the bacon drippings until they begin to soften and turn translucent. Season with salt and black pepper to taste. Add the minced garlic and sauté for 1 minute. Remove from the heat.
Pour cooked vegetables, beans, tomatoes, corn (if using), barbecue sauce, bourbon, fiesta seasoning, salt and 2 Tbsp cilantro into slow cooker. Mix well.
Cover and cook on low for 5-6 hours or on high for 3-4 hours. 1 hour prior to the end of cooking add sausages. Stir thoroughly.
At the end of cooking, uncover, mix in bacon, reserved cilantro and sprinkle with french fried onions.
Let uncovered stand for 15 minutes prior to serving.
