Instructions
Preheat oven to 400°F. Line 2 large baking sheets with parchment paper. Set aside.
In a medium size mixing bowl, use a whisk to sift together flour, garlic, mustard, onion powder and cayenne pepper.
Add the grated butter, stir until evenly distributed. To the bowl add buttermilk, mix well.
Once the dough is formed to the bowl add the cheddar cheese, ham and chives. Use a nonstick spatula to gently mix through the dough until fully combined.
Drop by tablespoon onto the prepared pan, leaving 2-inches between. Brush tops with melted butter.
Bake for 20-22 minutes or until lightly golden. (Adjust bake time according to size).
Brush tops again with melted butter and serve with sweet hot mustard, hot honey, Dijon mustard or maple syrup, for dipping.
Notes
Cheese: Sharp cheddar cheese is my go-to for this recipe as it can hold up to the bold flavor of country ham. You could adapt using another flavor of cheese such as pepper jack cheese, gruyere cheese or mild cheddar cheese.
Herbs: You could use chopped rosemary or thyme in place of chives.
Green Onions: Finely chopped green onion could be used for a slightly strong onion flavor.
Homemade Self Rising Flour: To the same amount of all purpose flour, add 1 tablespoon baking powder, 1/2 teaspoon salt and 1/2 teaspoon baking soda.
