Marshmallow Pops for St Patrick's Day

Ingredients

  • 24 regular marshmallows plus additional as needed
  • 1 12 oz package green candy melts i.e. Wilton
  • 1 12 oz package white candy melts i.e. Wilton
  • 24 long cake pop or lollipop sticks for dipping each marshmallow
  • 1 3.5 oz tube black sparkle gel i.e. Wilton
  • gold and silver confetti sprinkles
  • gold, silver and green sanding sugar
  • 8 long gold cake pop or lollipop sticks
  • 1 styrofoam dome or block

Instructions

  • Line a large baking sheet with parchment paper. Set aside.
  • Divide marshmallows, using 12 to dip in green candy coating and 12 to dip in white candy coating.
  • In a small, microwave safe bowl, melt 1-1 ½ cup green candy melts according to package instructions. Do not overheat. Stir, until completely smooth.
  • To coat marshmallows: Thread one marshmallow onto a white stick without pushing all the way through. (You may need to reheat candy melts mixture if it cools while decorating marshmallows. When doing so, add 1 tsp solid vegetable shortening, if needed to thin.)
  • Dip one marshmallow at a time into the candy melts at a 45° angle, twisting the stick until the marshmallow is fully covered. Gently tap the stick on the edge of bowl allowing excess to drip off.
  • Immediately sprinkle with gold or silver confetti sprinkles or gold, silver or green sanding sugar while wet. Likewise, if placing gold sprinkles in a pattern for the hats or spiral design do so while wet. (Apply gel hat band and draw black pot-o-gold after coating is dry.)
  • Repeat the process melting, dipping and decorating remaining 12 marshmallows in melted white candy coating.
  • Place onto parchment lined pan upside down to dry. Please note: For smooth topped marshmallows put the stick into the styrofoam dome to dry upright.
  • Once dried, carefully remove marshmallow from the white stick using scissors, or a knife to release back. Place back onto the pan with hole facing upwards. Assemble as desired, threading 3 decorated marshmallows onto each gold stick. Wrap in cellophane, tie with a ribbon for gift giving or enjoy immediately.
  • Decoration ideas for green marshmallows:
    -       White candy melt drizzle (use any reserved from dipping)
    -       Silver diagonal confetti sprinkles
    -       Silver sanding sugar
    -       Leprechaun Belt: To make, use gold confetti sprinkles with black sparkle gel (For the buckle, add 3 gold confetti sprinkles on top and bottom of where black belt line would be while candy is wet. Once dry, draw the black belt line and add the remaining 2 gold sprinkles to complete).
  • Decoration ideas for white marshmallows:
    -       Gold diagonal confetti sprinkles
    -       Gold sanding sugar
    -       Gold food color spray with green sanding sugar
    -       Pot of Gold: Black sparkle gel and gold confetti sprinkles (This is done when candy coating is dry. Use a dot of black sparkle gel on the back of the sprinkle to make it stick).

Notes

What if my candy melts are too thick to dip? If the candy melts cool and thicken while you work,  mix in 1 teaspoon of solid vegetable shortening, then reheat in the microwave, stir until smooth.
How should I store the marshmallow pops? Store at room temperature in an airtight container for up to 1 week.
Can I use chocolate instead? White chocolate chips can be used if desired! Just add green food coloring gel to the white chocolate chips for the green marshmallows. Both options taste great, but I’ve found that candy melts are easier to work with as they stay melted longer.
