2(1 pound each)packages chocolate almond bark (OR white almond bark OR one of each)
Instructions
Arrange 42 Ritz crackers flat side up on a wax paper lined baking sheet.
In a small mixing bowl, use a knife to swirl the marshmallow fluff through the peanut butter it doesn't have to be fully combined.
Dollop about 1/2 tsp peanut butter filling into the center of each cracker, place one cracker on top to sandwich together.
Melt chocolate almond bark per package instructions. Use a candy fork or two forks to dip each cracker in coating, placing back onto wax paper to dry.
Use any leftover almond bark to drizzle on the tops or decorate with seasonal sprinkles while wet.
Chill for 1 hour or just until set. Store in an airtight container at room temperature for up to 1 week.

Follow Package Directions for Melting Chocolate - How long should I melt the chocolate? The best course of action is to refer to the package and melt the almond bark per the package instructions. For dipping the crackers you need to a candy fork or two forks to carefully dip and cover all sides with chocolate. Have nearby a pan lined with wax paper to place the dipped crackers to dry. You can drizzle the tops with any leftover almond bark, if desired.
Chocolate - You can use chocolate almond bark or white chocolate almond bark to dip these Ritz crackers. You could also use one of each or use a contrasting color to visual interest.
Garnish - You can sprinkle the tops with seasonal nonpareils while the coating is still wet or chopped salted peanuts.
Drizzle the Tops - I like to use any leftover melted chocolate bark to drizzle on the tops. If you choose to use one of each, drizzle the tops with the contrasting color or sprinkle the tops with seasonal sprinkles for color.
Marshmallow Fluff Substitution - If you prefer, you can use powdered sugar in place of marshmallow fluff. Begin with 1/2 cup then taste and adjust the sweetness to your liking.
