4(8 oz each)boneless skinless chicken breastscut into 3/4 inch cubes
2/3cupall purpose flour
1tspseasoned salt
1tspgranulated garlic
1tsponion powder
1tsppaprika
1/2tspblack pepper
2largeeggs
2Tbspbuttermilk or whole milk
2cupspanko breadcrumbs
1/2cupfinely grated Parmesan cheese
cooking spray or oil mister
Instructions
Preheat air fryer to 375°F.
In a shallow bowl, whisk together flour, seasoned salt, granulated garlic, onion powder, paprika and black pepper.
In a separate bowl, whisk eggs with buttermilk.
In a third shallow bowl or container, whisk together panko breadcrumbs and Parmesan cheese.
Coat chicken pieces with flour mixture, then into egg wash and panko-parmesan mixture pressing the breadcrumbs firmly onto the chicken. Place onto a sheet pan.
Spray the basket of the air fryer with cooking spray or use an oil mister. Spray chicken with cooking spray and arrange in the basket in a single layer. Cook for 12 minutes, in two batches to prevent overcrowding.
Check halfway through (around 6 minutes) and flip spraying any dry spots in the breading with additional cooking spray or oil.
Serve immediately with your favorite dipping sauces.
Notes
Oven Method:
Preheat the oven to 425°F. Liberally spray a baking sheet with cooking spray. Set aside.
Follow the recipe for breading the chicken nuggets.
Arrange on baking pan without touching. Spray the chicken liberally with cooking spray.
Bake for 15-20 minutes drizzling with melted butter halfway through baking and turning.
