Ingredients

  • 4 (8 oz each) boneless skinless chicken breasts cut into 3/4 inch cubes
  • 2/3 cup all purpose flour
  • 1 tsp seasoned salt
  • 1 tsp granulated garlic
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 2 large eggs
  • 2 Tbsp buttermilk or whole milk
  • 2 cups panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • cooking spray or oil mister

Instructions

  • Preheat air fryer to 375°F.
  • In a shallow bowl, whisk together flour, seasoned salt, granulated garlic, onion powder, paprika and black pepper.
  • In a separate bowl, whisk eggs with buttermilk.
  • In a third shallow bowl or container, whisk together panko breadcrumbs and Parmesan cheese.
  • Coat chicken pieces with flour mixture, then into egg wash and panko-parmesan mixture pressing the breadcrumbs firmly onto the chicken. Place onto a sheet pan.
  • Spray the basket of the air fryer with cooking spray or use an oil mister. Spray chicken with cooking spray and arrange in the basket in a single layer. Cook for 12 minutes, in two batches to prevent overcrowding.
  • Check halfway through (around 6 minutes) and flip spraying any dry spots in the breading with additional cooking spray or oil.
  • Serve immediately with your favorite dipping sauces.

Notes

Oven Method: 
  • Preheat the oven to 425°F. Liberally spray a baking sheet with cooking spray. Set aside.
  • Follow the recipe for breading the chicken nuggets.
  • Arrange on baking pan without touching. Spray the chicken liberally with cooking spray.
  • Bake for 15-20 minutes drizzling with melted butter halfway through baking and turning.
  • Serve immediately.
