- 1 1/2 cups all purpose flour
- 1/4 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp granulated garlic
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 2/3 cup whole milk or buttermilk
- 2 large eggs
- 2 Tbsp unsalted butter melted
- 3 cups fresh corn kernels
- 2 Tbsp chopped fresh chives
- 4-6 cups peanut oil or vegetable oil for frying
Heat oil in a deep pot fitted with a fry thermometer to 360 - 365°F.
In a medium bowl, use a whisk to sift together flour, sugar, baking powder, salt granulated garlic, onion powder and paprika.
In a separate bowl, whisk together milk, melted butter and eggs.
Add to the dry ingredients with the corn and chives. Mix until fully combined.
Use a small scoop (about 1 1/2 Tbsp) to drop fritter batter into the hot oil. Fry in batches for 2-3 minutes, turning as needed for even browning.
Remove to a paper towel lined platter or sheet pan. Repeat until all is used.
Serve immediately with maple syrup for dipping.
