Ingredients

  • 1 1/2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp granulated garlic
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 2/3 cup whole milk or buttermilk
  • 2 large eggs
  • 2 Tbsp unsalted butter melted
  • 3 cups fresh corn kernels
  • 2 Tbsp chopped fresh chives
  • 4-6 cups peanut oil or vegetable oil for frying

Instructions

  • Heat oil in a deep pot fitted with a fry thermometer to 360 - 365°F.
  • In a medium bowl, use a whisk to sift together flour, sugar, baking powder, salt granulated garlic, onion powder and paprika.
  • In a separate bowl, whisk together milk, melted butter and eggs.
  • Add to the dry ingredients with the corn and chives. Mix until fully combined.
  • Use a small scoop (about 1 1/2 Tbsp) to drop fritter batter into the hot oil. Fry in batches for 2-3 minutes, turning as needed for even browning.
  • Remove to a paper towel lined platter or sheet pan. Repeat until all is used.
  • Serve immediately with maple syrup for dipping.
