1/4cupsoy sauce
2Tbsplight brown sugar
2Tbspchopped cilantro
3clovesgarlicminced
Pasta Ingredients:
1lbfettuccinecooked to al dente
1 1/4cupAsian Toasted Sesame Salad Dressing
2/3cupcreamy peanut butter
2Tbsprice wine vinegar
2tsptoasted sesame seeds plus additional for garnishing
2tspred pepper flakesadjust to taste
1small red bell pepperseeds removed & thinly sliced
4green onionsthinly sliced
12ozsugar snap peassteamed crisp tender
1/4cupchopped cilantro
garlic salt and black pepperadjust to taste
1/4cuppeanutsroughly chopped
Instructions
Make the Marinade: In a shallow dish or large Ziploc bag whisk together prepared Asian Toasted Sesame salad dressing, soy sauce, brown sugarĀ chopped cilantro and garlic. Add chicken turning to coat. Marinate in the fridge for at least 4 hours or overnight.
Grill Chicken: Oil the grates of a gas grill then heat to medium-high. (You can also prepare indoors on a grill pan.)
Grill the chicken 5 minutes per side depending on the thickness of the chicken. Cook until the juices run clear. Rest on a platter for 5 minutes then slice into strips.
Pasta: Cook pasta in salted water per the package instructions until al dente. Drain well.
Dressing: In a large mixing bowl whisk together toasted sesame dressing, peanut butter, rice wine vinegar, sesame seeds and red pepper flakes. Add drained pasta. Mix well.
To the pasta add chicken, red pepper, green onion, sugar snap peas and cilantro. Stir well. Taste and adjust adding garlic salt and black pepper, to your taste.
Serve warm, room temperature or chilled garnished with chopped peanuts and toasted sesame seeds.
