Cherry Tomato, Basil And Feta Salad

Ingredients

  • 1 [0.6 oz] packet zesty Italian dry salad dressing mix [I used Good Seasons]
  • 1/4 cup white balsamic or champagne vinegar
  • 1/2 cup olive oil
  • 1/4 tsp red pepper flakes
  • fresh cracked black pepper
  • For the salad you'll need:
  • 3 cups cherry tomatoes halved
  • 1 [8 oz] block tomato-basil feta cheese 1/2 inch cubes
  • 1 medium purple onion thinly sliced
  • 3 Tbsp chiffonade of basil [more or less to taste]

Instructions

  • In a mixing bowl, mix together the vinegar, dry zesty Italian dressing mix, black pepper and red pepper flakes. Drizzle in the olive oil, whisking until it's fully combined and the vinaigrette has emulsified.
  • Halve, the tomatoes, and thinly slice the onion. Cut the cheese into 1/2" cubes.
  • Add to the mixing bowl.
  • Toss gently.
  • Adjust the salt and pepper just before serving, if needed.
  • Chill for at least 1 1/2-2 hours before serving.
  • Sprinkle with additional basil to garnish.
