Garlic Herb Whipped Potatoes

Ingredients

  • 3 lbs russet or yukon gold potatoes peeled and cubed
  • 6 wedges garlic herb flavored spreadable cheese (i.e. Laughing Cow)
  • 2/3 cup sour cream
  • 4 Tbsp salted butter
  • 1/2 cup warm milk plus additional as needed
  • 1 tsp salt to taste
  • 1/2 tsp granulated garlic
  • 1 Tbsp fresh parsley for garnishing

Instructions

  • In a medium stove top pot, cover the potatoes with cold salted water and bring to a boil. Cook over medium high heat until fork tender. [About 15 minutes]
  • Drain potatoes well. Add the cheese wedges, sour cream, butter, salt and granulated garlic.
  • Using an electric mixer on medium-high speed, whip the potatoes with warm milk until smooth, adding additional warm milk as needed until you reach the desired consistency.
  • Serve warm garnished with parsley, if desired.

Notes

a.) Adding 2 tablespoons of chopped fresh parsley to the potatoes makes the potatoes more visually interesting. It won't change the flavor if you opt to leave it out.
b.) Crema is a mild and delicately flavored Mexican cream. If you can't find it, sour cream always works!
