Poppy Seed Salad Dressing

Ingredients

  • 1/3 cup apple cider vinegar
  • 1/2 cup granulated sugar
  • 1 finely minced shallot or 1/4 cup red onion
  • 1 1/2 tsp dry mustard
  • 1 1/2 tsp coarse sea salt
  • 1 1/2 tsp poppy seeds
  • 1 cup canola oil

Instructions

  • Combine the first 5 ingredients in a blender.
  • Reserve the poppy seeds and oil.
  • Puree for 20-30 seconds until the ingredients are smooth.
  • Remove the lid, lower the speed of the blender and add the poppy seeds.
  • Drizzle in the Canola oil slowly while the blender processes the dressing. Continue until the mixture emulsifies and thickens.
  • Chill until serving.

Notes

For a time saver, look in the mixed nut section of the grocery store for candied nuts. They have several varieties to choose from and they usually include candied almonds, walnuts and pecans. Any of these are terrific sprinkled on this salad, just go with your preference.
