2 1/2tspOld Bay or similar seafood seasoningdivided use
124 ozpackage mixed baby potatoeshalved
4mediumears fresh cornshucked and cut into 4 pieces each
112 ozsmoked kielbasa or andouille sausage1/4 inch slices
1lbx-large tails on raw shrimppeeled and deveined
1Tbsplemon zest
2Tbspchopped fresh Italian parsley
lemon slices or wedges for serving
Instructions
Preheat oven to 400°F. Line an oversized rimmed sheet pan with foil or parchment. If using foil, spray with cooking spray. (Alternatively, use 2 standard sheet pans)
Mix together melted butter and oil. Add halved potatoes to a mixing bowl. Drizzle with 1/3 butter-oil mixture. Season with 1 tsp Old Bay then, toss to coat. Arrange on pan cut side up. Bake for 15 minutes.
In the same bowl, toss the corn with 1/3 butter-oil mixture. Add kielbasa, and 1 tsp Old Bay. Toss to coat. After 15 minutes, push potatoes to outer edge of pan and arrange corn and kielbasa in the center of pan. Bake for 12 minutes.
In the same mixing bowl, add shrimp. Season with 1/2 tsp Old Bay and drizzle with remaining butter. Toss to coat. Push kielbasa and corn toward edge of pan near potatoes and add shrimp in a single layer to the middle of the pan. Bake for 12-15 minutes or just until pink.
Use a large spoon to stir coating everything in pan juices. Garnish with lemon zest and parsley.
Serve immediately with additional lemon slices or wedges, if desired.
Notes
Cook's Notes:
Keep in mind that seafood seasonings generally have ample salt for the entire dish, hence the reason there's no salt called for in this recipe. Should you use a different blend, adjust the salt adding to your taste, as needed.
Lite smoked sausage or turkey kielbasa works well in this recipe.
