Air Fryer Barbecue Chicken Kabobs

Ingredients

  • 1/3 cup honey
  • 1/3 cup ketchup
  • 2 Tbsp olive oil
  • 2 Tbsp lime juice
  • 1 heaping Tbsp light or dark brown sugar
  • 1 Tbsp ground chipotle pepper
  • 1/2 Tbsp dark chili powder
  • 1 tsp seasoned salt
  • 1/2 tsp granulated garlic
  • 1/2 tsp onion powder
  • 4 8 oz boneless skinless chicken breasts cut into 1 1/2 inch cubes
  • 8 wooden skewers soaked in water
  • lime wedges and cilantro for serving

Instructions

  • In a medium size mixing bowl whisk together honey, ketchup, olive oil, lime juice, brown sugar, chipotle powder, chili powder, seasoned salt, garlic and onion powder.
  • Toss chicken with marinade coating thoroughly. Let marinate for 30 minutes.
  • To Prepare: Preheat the air fryer to 380°F. Spray basket with cooking spray to prevent the skewers from sticking.
  • Thread chicken onto skewers and place in air fryer basket leaving room between for air to circulate. Cook for 10-12 minutes, flipping the skewers halfway through. (Chicken will be done when the core temperature reads 165°F on a meat thermometer.)
  • Plate skewers and let rest for 5 minutes. Squeeze a little lime juice on each skewer, top with chopped cilantro and extra lime wedges on the side. Enjoy with dipping sauce.
  • BONUS RECIPE FOR DIPPING SAUCE: In a small bowl, whisk together 1/2 cup prepared Ranch dressing, 2 tablespoons lime juice with 1 teaspoon lime zest and 1 tablespoon chopped cilantro. Refrigerate until serving, then serve with chicken kabobs for dipping.

Notes

Grill Instructions:
  1. In a medium size mixing bowl whisk together honey, ketchup, olive oil, lime juice, brown sugar, chipotle powder, chili powder, seasoned salt, garlic and onion powder.
  2. Toss chicken in marinade and coat thoroughly. Let marinate for 30 minutes.
  3. Prep the grill by heating it to a medium high temperature (about 400 degrees F).
  4. Skewer the chicken and then place on the grill. Cook on each side for 4 minutes. Baste with marinade, if desired only while cooking. (Not at the end of cooking)
  5. Chicken will be done when the core temperature reads 165°F on a meat thermometer.
  6. Plate skewers and squeeze a little lime juice on each skewer. Top with finely chopped fresh cilantro with extra lime wedges on the side. Enjoy!
