Eggplant Parmesan

This recipe for Eggplant Parmesan is flavor-packed. Serve it with a crisp green salad and a basket of warm garlic bread for a restaurant quality meal at home.

– Eggplant  – Kosher salt – All-purpose flour – Eggs – Milk – Italian breadcrumbs – Panko breadcrumbs  – Mozzarella cheese  – Parmesan cheese

In a large skillet drizzled with olive oil, fry the eggplant slices in batches over medium high heat. Cook for around 3 minutes per side or until fork tender.

The amount of layers can vary depending on the size of the eggplants used. Divide ingredients evenly between layers.
