A mixer makes light work of bread making and is my preferred method. Please note, when kneading by hand it will take longer than 5 minutes and the rule of thumb is the same. Knead the dough until it becomes smooth and elastic.
When cutting the slices on top of the loaves, use a super sharp knife and slice diagonally not straight across. It’s not necessary to cut deep. Use a quick slashing movement and avoid sawing the dough.
