Instructions
Preheat oven to 425°F. Liberally spray a standard rimmed sheet pan liberally with nonstick cooking spray.
Arrange 12 tater tots into 4 separate squares on the pan. Place into the preheated oven and bake for 20 minutes.
Remove pan from the oven and use the back of a spoon to gently press the center of each tater tot crust making a slight indentation forming a well for the toppings. (It's not necessary to press it flat.)
Divide 1/2 cup of cheese evenly over each portion of tater tots. Arrange the bacon over the cheese.
Carefully crack one egg into a small bowl then transfer to the center of each stack allowing the egg white to spread over the tater tots forming a "glue."
Season with salt and black pepper to your taste. Sprinkle the tops of each egg with the remaining shredded cheese.
Bake for an additional 6-10 minutes or until the egg is cooked to your preference and the cheese is lightly golden brown.
Sprinkle with green onions and top with a dollop of sour cream, if desired.
Notes
Protein - You can use cubed ham, canadian bacon crumbled sausage or a cooked sausage patty in place of crumbled bacon. Brown patties prior to assembling.
Eggs - You could top these breakfast stacks with scrambled eggs, then just pop them back into the oven until the cheese has melted.
Hashbrowns - I used the barrel shaped tater tots, but you could adapt using crispy crowns, too. You could use frozen hash brown patties. Follow the package directions to brown patties.
Cheese - You could use sharp cheddar cheese, pepper jack cheese, monterey jack cheese or any of your favorite cheese flavors.
Spices - You could use garlic salt for a hint of garlic and crushed red pepper flakes for spice.
Fresh Herbs - You could use chives in place of green onions or garnish the top with fresh parsley.
Adjust the Servings - This recipe can easily be adapted to make as many breakfast stacks as you need. You can make as few as two, or as many as twenty since the ingredients are easily adaptable either way.
Eggs and Cheese - The eggs form the glue that holds these breakfast stacks together. The cheese enhance it's staying power.
Veggies - To make these meat free, top the tater tots with vegetables like sautéed bell peppers and onions or mushrooms for a spectacular meat free version. You could also add diced avocado or tomato as a garnish.
Spice - You may like to add jalapenos or use pepper jack cheese to add a little heat to the toppings.
Breakfast Stacks Benedict - Use Canadian bacon and drizzle of Blender Hollandaise Sauce on top after baking.
