1lbspicy or mild pork breakfast sausagecooked and crumbled
8frozen buttermilk biscuitsthawed and quartered
12large eggs OR 2 cups egg whites plus 6 large eggs
1cuphalf and half
1Tbspchopped chives
1/2tspsalt
1/2tsponion powder
1/2tspblack pepper
1/2tspground mustard
1/4tspgarlic powder
2cupsshredded colby jack or cheddar cheesedivided use
2Tbspbutter
Instructions
Preheat the oven to 375°F. Butter a 12x8-inch baking dish or spray with cooking spray.
In a medium size mixing bowl, whisk together eggs, half and half, chives, salt, onion powder, pepper, mustard and garlic powder.
Arrange the biscuit quarters in the bottom of the baking dish and sprinkle with half of the shredded cheese. Layer the cooked sausage on top
Pour the egg mixture evenly over all. Top with the remaining shredded cheese and dot with butter. Cover and chill if making in advance.
Place into the preheated oven and bake for 25-30 minutes until puffy and golden brown.
Test the center with a toothpick checking for moist crumbs before removing from the oven.
Rest for 5 minutes then cut and serve.
Notes
Canned Biscuits: This recipe can also be adapted using canned buttermilk biscuits. Each adaptation will change the dish a bit, but it will still be delicious.
Sausage: You can use mild or spicy breakfast sausage or chorizo sausage for extra kick. It's simple to adapt to suit your personal preference. You could also use turkey sausage.
Alternate Protein: You could omit the sausage and use cubed ham or bacon for the filling instead.
Egg Whites: You can make the filling using half whole eggs and half Egg Beaters or a similar egg white product to cut calories.
Cheese: You can use any flavor of cheese you like, or have on hand, in the same amount. Colby jack cheese, pepper jack cheese, gouda cheese, gruyere cheese or provolone cheese.
Veggies: You could add sautéed red bell pepper, green bell pepper or mushrooms.
Make Homemade Biscuit Dough: You can make your own biscuits for this dish using my Southern Buttermilk Biscuits recipe if you prefer. Make them per the recipe, then cut into quarters and assemble the cobbler per the directions.
