Apple Cinnamon Biscuit Muffins

Ingredients

  • 8 buttermilk or butter flavored frozen biscuits
  • 1/2 cup quality apple jelly
  • 1/2 cup salted or unsalted butter melted
  • 1/2 cup granulated sugar
  • 1 Tbsp ground cinnamon
  • 1 1/2 tsp half and half
  • 1/2 cup powdered sugar
  • 1 tsp pure vanilla

Instructions

  • Preheat the oven to 375°F. Spray 8 cups of a muffin tin with cooking spray and set aside.
  • Thaw frozen biscuits in the microwave on 50% power. Alternatively, thaw in the refrigerator covered with plastic wrap overnight.
  • Mix together the sugar and cinnamon until combined in a shallow bowl. Dip each biscuit in melted butter then sprinkle all sides with the cinnamon sugar mixture.
  • Place each into a muffin cup. Using your thumb or a shot glass make a deep well in the center. Drop 1 tsp apple jelly into the center.
  • Bake for 14-16 minutes or until the tops are golden. After baking sprinkle with any leftover cinnamon sugar
  • Glaze: In a small bowl mix together half and half, sugar and vanilla until all of the sugar has dissolved. Drizzle the biscuits then serve immediately.

Notes

1. The apple jelly will melt and infuse the flavor into the center of the biscuits. As the center of the biscuit rises, some may escape. Make sure your oven is lined with aluminum foil just in case it drips from the pan.
2. You can also use light butter, low sugar jam and Splenda Brown Sugar Blend for these muffins.
