Apple Cinnamon Biscuit Muffins are an extension of the favorite house bread of the South. Dipped in butter, then coated with cinnamon sugar, the centers are filled with apple jelly and baked. They make a tasty start to any day.

Biscuits in the South are a staple. They are available just about anywhere you can purchase a quick breakfast on the run. Years ago, neither of my Grandfathers would have ever left the house for work without a big and hearty hot breakfast. It usually consisted of eggs, bacon, sausage, gravy, grits, fried potatoes or hash browns, oatmeal, the list could go on and on. Of course, it could also be any combination of the aforementioned. One thing was for sure, whatever the choice, it wouldn't be complete without a plate of hot, buttered biscuits.

Apple Cinnamon Biscuit Muffins
Servings: 8 biscuit muffins

Ingredients
- 8 buttermilk or butter flavored frozen biscuits
- ½ cup quality apple jelly
- ½ cup salted or unsalted butter melted
- ½ cup granulated sugar
- 1 tablespoon ground cinnamon
- 1 ½ teaspoon half & half
- ½ cup powdered sugar
- 1 teaspoon pure vanilla
Instructions
- Preheat the oven to 375°F. Spray 8 cups of a muffin tin with cooking spray and set aside.
- Thaw frozen biscuits in the microwave on 50% power. Alternatively, thaw in the refrigerator covered with plastic wrap overnight.
- Mix together the sugar and cinnamon until combined. Dip each biscuit in melted butter then sprinkle all sides with the cinnamon sugar mixture.
- Place each into a muffin cup. Using your thumb or a shot glass, make a deep well in the center. Drop 1 teaspoon apple jelly into the center.
- Bake for 14-16 minutes or until the tops are golden. After baking sprinkle with any leftover cinnamon sugar
- To make the glaze: In a small bowl mix together half and half, sugar and vanilla until all of the sugar has dissolved. Drizzle the biscuits then serve immediately.
Notes
1. The apple jelly will melt and infuse the flavor into the center of the biscuits. As the center of the biscuit rises, some may escape. Make sure your oven is lined with aluminum foil just in case it drips from the pan.
2. You may also use light butter, low sugar jam and Splenda Brown Sugar Blend for these muffins.
