1-2tspplain salt, seasoned salt or garlic saltadjust amount to taste

Homemade Fry Sauce:
1cupmayonnaise
1/2cupketchup
1/4cupchili sauce (i.e. Heinz)
1Tbspdill pickle juice
1/2tspliquid smoke
1tspgranulated garlic
1tspsmoked paprika
1/2tsponion powder
1/4tspcayenne or a few dashes of hot sauce
Instructions
Scrub and dry potatoes, leaving peel intact. Cut into match sticks around 1/3 inch thick using a sharp knife or a French fry cutter.
Place into a large bowl and cover with cold water. Soak for 30 minutes, then spread on paper towels and pat dry.
In a large 6 quart Dutch oven or similar, heat 4-5 inches of oil to 300°F. Cook potatoes in batches for about 5 minutes to soften. (The potatoes shouldn't be browned at this point) Remove using a slotted spoon to a paper towel lined baking sheet.
Once all French fries are done, increase temperature to 400°F. Cook the fries in batches for 3-4 minutes until golden and crisp. Return to baking sheet and immediately season with salt.
Serve with fry sauce, ketchup or any of your favorite dipping sauces garnished with salt and parsley.
To make Fry Sauce: In a small bowl whisk together mayonnaise, ketchup, chili sauce, Worcestershire sauce, liquid smoke, granulated garlic, paprika, onion powder and cayenne or hot sauce until fully combined. Chill for at least 4 hours prior to serving.

Air Fryer Instructions:
Preheat an air fryer to 380° F and spray the basket with nonstick cooking spray.
Cut the potato in half lengthwise, then into 1/4-inch slices. Cut slices into 1/4 inch thick match sticks.
Place into a colander and rinse well with cold water. Dump out onto paper towels and pat dry.
In a medium-size bowl, toss with 2 teaspoon vegetable oil and season with salt to taste.
Working in batches, arrange fries in an even layer in the air fryer basket with no overlapping. Cook for 8-10 minutes turning them halfway through and spraying with cooking spray, if needed. Continue to fry for another 6-8 minutes until golden brown and crisp, 14 to 16 minutes total.
Remove and immediately season with additional salt, if desired.
