2cupsblueberries, blackberries or raspberries (Or a mix of fresh berries)
1cupseedless grapes
3mediumkiwi, thinly sliced
2large peachespitted and sliced
2mediumnaval oranges OR mandarin orangespeeled and sectioned
2mediumbananas, sliced
fresh mint sprig for garnishing
Instructions
Dressing: In a small saucepan over medium heat, simmer lime juice, lemon juice, honey, sugar, lime zest and lemon zest. Simmer until sugar is completely dissolved. Set aside to cool. (This can be done up to 2 days in advance and chilled)
Rinse and clean fruit patting dry with paper towels. Toss fruit together in a large bowl then cover and chill for at least 2 hours preferably 4 hours. (Add banana just before serving)
Serve: Pour dressing over fruit, add sliced bananas. Gently toss to coat with dressing then serve immediately garnished with mint.
Store leftover fruit salad chilled in an airtight container in the refrigerator for up to 3 days.
Notes
If you prefer, you can use all lime juice or only lemon juice for the dressing. You could also use orange juice. Should you opt for orange juice, replace the zest with orange zest.
