1 1/2tsp salt(Plus 1 tablespoon salt to blanch green beans)
1/2tspblack pepper
1/2tspgranulated garlic
1/2tsponion powder
2largeeggs
1/4cupwhole milk
few dashes hot sauce
4-6cupsvegetable oil or peanut oil for frying
2-3Tbspgrated Parmesan cheese and fresh chives for garnishing
Ranch dressing or garlic aioli for dipping
Instructions
Bring a large pot of water to a boil with 1 tablespoon salt. Add the green beans cooking for 3-4 minutes or just until bright green. Immediately dunk green beans into a bowl of ice water to stop the cooking process. Drain well then pat dry with paper towels.
Heat oil in a Dutch oven or deep pot fitted with a frying thermometer to 350°F.
Set up the dredging station using shallow bowls. First bowl: All purpose flour whisked with 1 teaspoon Cajun seasoning, 1 teaspoon salt, black pepper, granulated garlic and onion powder. Second bowl: 2 eggs beaten with milk, 1/2 teaspoon Cajun seasoning, 1/2 teaspoon salt and a few dashes of hot sauce. Third bowl: Italian seasoned breadcrumbs.
Coat green beans in seasoned flour. Dip into egg, then into seasoned crumbs, pressing crumbs firmly onto the green beans. Have nearby a sheet pan to hold the coated green beans until frying.
Fry in batches for 3-5 minutes or until golden. Remove using tongs or a stainless steel spider to a paper towel lined platter. Immediately season with additional Cajun seasoning to taste. Keep warm.
Serve immediately garnished with Parmesan cheese, chives and Ranch salad dressing, Caesar salad dressing or warm pizza sauce for dipping.
