Ingredients

  • 2-3 large Granny Smith apples
  • 2 Tbsp granulated sugar
  • 1 1/2 tsp apple pie spice or ground cinnamon
  • 1 sheet frozen puff pastry thawed per the package instructions
  • 1 large egg beaten with 1 teaspoon cold water for the egg wash
  • 1-2 tbsp turbinado sugar (sugar in the raw)

Instructions

  • Puff Pastry: Depending on time, thaw the puff pastry per the package directions either in the refrigerator or on the counter.
  • Preheat the oven to 400°F.  Line a standard size cookie sheet with parchment paper.  Set aside.
  • Apple Rings: Peel the apples and slice each apple horizontally into 1/2- inch thick slices. (Depending on the size of the apple, you could yield 4 slices per apple).
  • Use an apple corer to core the apples. You can also use a small cookie cutter or a large piping tip to remove the core of the apple slices.  Set aside.
  • Puff Pastry: Roll out the sheet of puff pastry into roughly a 10x12-inch rectangle. Cut into 1-inch strips. 
  • In a shallow bowl or plate, combine the sugar and apple pie spice (or cinnamon) together. Coat the apple slices in the sugar mixture. 
  • Beginning at the center hole, wrap the pastry strips around the outside of the apple slices.The pastry should overlap a little in the core area, but the dough will not be touching around the outeredge. Place the rings on the prepared cookie sheet 2-inches apart.
  • Egg Wash: In a small bowl, whisk the egg and water together. Brush the pastry with the egg wash and sprinkle the turbinado sugar liberally over each one.
  • Bake for  20-25 minute until the pastry will is golden brown and the apples are fork tender. Cool on the pan for at least 10 minutes before using a spatula to transfer to a wire rack to cool completely. 
  • Enjoy warm or at room temperature. 

Notes

  • Apples - Granny smith apples are the apple of choice for classic apple pie due to their tart flavor and they maintain their texture when baked. You could use honeycrisp apples, braeburn, fuji apples pink lady or gala apples. You could also adapt this recipe using pears.
  • Cut into Equal Portions - For even baking, you want to keep the apple slices uniform in thickness.
  • Spice - You could use cinnamon in place of apple pie spice. For added depth, you can add a pinch of nutmeg or cardamom to the cinnamon sugar mixture.
  • Keep Puff Pastry Moist - Puff pastry can dry out very quickly while you are slicing the apples. To keep it moist, cover the pastry with a damp paper towel while you work.
  • Yield - Depending on the size of the apples, you could get 4 slices out of each apple. When slicing the apples, it's better to go thicker, rather than thinner. Thin apple slices will bake more quickly than the puff pastry.
  • Serving Options - You can enjoy these apple rings warm or chilled with vanilla ice cream or a dollop of whipped cream and a drizzle of caramel sauce. You could also enjoy them with dessert dips like caramel and warm chocolate ganache for dipping.
