Instructions
Heat the waffle iron. Spray with nonstick cooking spray or brush with vegetable oil. (Some waffle irons are simply an on/off units, but if yours has settings, set it to high heat.)
In a large bowl, whisk together the all purpose flour, baking powder, baking soda, cinnamon, salt and nutmeg. Set aside.
In a medium-sized mixing bowl, whisk together the milk, melted butter, vanilla extract, brown sugar, and eggs.
Add the milk mixture to the flour mixture bowl and stir until no streaks of flour remain.
Add the mashed banana and stir everything together until fully combined.
Pour approximately 1/4-cup of batter into the waffle iron. Lower the lid and cook for 4-5 minutes. The waffles will be a deep brown and will be slightly crispy on the outside.
Enjoy immediately, while warm, with whipped cream, maple syrup, banana slices and chopped walnuts.
Notes
Flour - You could adapt this recipe using whole wheat flour or gluten free flour. Both cook differently so make any adjustments as needed, to accommodate.
Chocolate Chips - You could add mini chocolate chips to the waffle batter.
Milk - You can use almond milk or oat milk in place of whole milk.
Prepare the Waffle Iron - Most waffle irons don’t need to be sprayed with cooking spray. However, check your user’s manual. If your manufacturer recommends cooking spray or brushing with vegetable oil, please use it to prevent sticking.
Cook in Batches and Keep Warm - Keep your waffles warm by preheating your oven to 200°F. Place the banana waffles on a sheet pan or an oven-safe dish and keep them in the oven until you are ready to serve.
Topping Options - You can adapt the toppings to suit your taste. You can replace walnut with pecans. Maple syrup is classic for waffles, but you could drizzle these waffles with honey, warm peanut butter, yogurt, nutella, caramel or top them with bananas foster to elevate these waffles even further!
