Brown Sugar Cookies

These soft and chewy brown sugar cookies are an easy old-fashioned treat made with simple pantry ingredients. Rich, buttery, and full of warm brown sugar flavor, they’re perfect with coffee, for sharing, or anytime a homemade cookie is calling your name.

Ingredients

  • 3 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup unsalted butter room temperature
  • 1 cups packed dark brown sugar
  • 1 Tbsp dark molasses
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1/2 cup granulated sugar for rolling

Instructions

  • Preheat oven to 350°F. Line 2 large baking sheet pans with parchment paper. Set aside.
  • In a medium bowl use a whisk to sift together flour, baking soda, salt and ground cinnamon.
  • In a large bowl use an electric mixer on medium-high speed to cream together the butter, brown sugar and molasses. Beat until fluffy and combined, around 2 minutes.
  • To the bowl add the eggs one at a time, beating well after each addition. Add the vanilla extract, beat just to incorporate.
  • Lower the speed of the mixer and gradually add the flour mixture beating on low until no flour remains.
  • Place granulated sugar on a plate or shallow bowl.
  • Use a 1 1/2 Tbsp cookie scoop to divide the cookie dough. Roll into a all, then coat in granulated sugar.
  • Arrange dough balls on the prepared pan at least 2-inches part.
  • Transfer to oven and bake for 10-12 minutes until the edges are lightly golden brown and the centers are puffed. Remove from the oven and cool on the pan for 1 minute. (The center will settle as it cools).
  • Transfer cookies to a wire rack to cool completely or enjoy warm.

Notes

  • Sugar - Dark brown sugar has a deeper molasses flavor so that's my go-to for this cookie recipe. In a pinch, you could use light brown sugar.
  • Molasses - Use classic molasses, not blackstrap molasses, which can be bitter.
  • Nuts - These cookies are simply delicious on their own and don't really need any extras. That said, you could add one cup of chopped pecans, almonds or walnuts to the cookie dough.
  • Chocolate Chips - You could stir in 1 cup of semisweet chocolate chips, milk chocolate chips, white chocolate chips or peanut butter chips.
  • Cinnamon - You could add cinnamon to the granulated sugar for a more intense cinnamon flavor.
  • Baking Powder - This recipe uses baking soda alone for the chewy texture it gives to the cookies.
