Cheeseburger Macaroni Casserole

Ingredients

  • 1 lb lean ground beef
  • 1 medium sweet onion diced
  • 1-2 Tbsp olive oil
  • 2 medium garlic cloves minced
  • 4 cups low sodium beef broth
  • 1 14 oz can petite diced tomatoes
  • 2/3 cup ketchup
  • 2 Tbsp yellow mustard
  • 2 Tbsp worcestershire sauce
  • 1 1/2 Tbsp steak seasoning i.e. Montreal seasoning or Chicago seasoning
  • 1 tsp dark chili powder
  • 1 lb twisted elbow macaroni or classic elbow macaroni
  • 1/3 cup diced dill pickle slices plus additional for garnishing
  • 3 cups sharp cheddar cheese divided use
  • 1 1/2 cups heavy cream
  • 1/2 cup french fried onions
  • chopped fresh parsley for garnishing

Instructions

  • In a large skillet over medium-high heat, cook the ground beef and onion in a drizzle of olive oil until no pink remains. (Drain if excess grease but for a richer flavor, leave some behind.)
  • Increase the temperature to high adding the beef stock, tomatoes, ketchup, mustard and Worcestershire sauce to the beef mixture. Stir in the macaroni, steak seasoning and chili powder.
  • Bring to a boil, then lower the heat to medium. Simmer for 8-10 minutes or just until the macaroni is tender.
  • To the pot add 2 cups cheese, heavy cream and pickles. Stir to combine.
  • Preheat oven to 350°F. Spray a 13x9-inch casserole dish with nonstick cooking spray.
  • Transfer macaroni mixture to the dish. Top with remaining 1 cup cheddar cheese and sprinkle with french fried onions.
  • Bake for 30 minutes or until bubbly and golden brown.
  • Serve hot garnished with parsley.

Notes

  • Protein - You can use ground chicken, ground pork or ground turkey in place of ground beef.
  • Cheese - You can use any variety of cheese that you enjoy. Try colby jack cheese, mozzarella cheese or spicy pepper jack cheese.
  • Pasta - You could use medium shells or rotini in place of elbow macaroni.
  • Topping Options - You can top this casserole with panko breadcrumbs or crushed buttery Ritz crackers or club crackers in place of french fried onions. Toss with melted butter and sprinkle on top before baking.
