Ingredients

  • 2 6 oz boxes stuffing mix i.e. Stove Top or similar
  • 2 cups boiling low sodium chicken stock or water
  • 4 Tbsp unsalted butter melted
  • 2 cups steamed frozen mixed vegetables (cook per the package directions)
  • 3-4 cups diced cooked chicken
  • 2 cups shredded cheddar cheese divided use
  • 1 10 oz can cream of chicken soup
  • 1 10 oz can cream of celery soup
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 1 1/2 tsp granulated garlic or garlic powder
  • 1 tsp seasoned salt
  • 1 tsp poultry seasoning i.e. Poultry Magic or similar
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • chopped parsley or chives for garnishing

Instructions

  • Preheat the oven to 350°F. Spray a 13x9-inch baking dish with nonstick cooking spray.
  • In a medium bowl combine the stuffing mix with hot chicken stock (or water) and melted butter. Fluff with a fork then set aside.
  • Steam mixed veggies per the package directions. Drain well.
  • In a large bowl use a large rubber spatula or spoon to combine the chicken, mixed vegetables, 1 cup shredded cheese, cream of chicken soup, cream of celery soup, mayonnaise, sour cream, granulated garlic, seasoned salt, poultry seasoning, onion powder and black pepper. Stir until fully combined.
  • Transfer mixture to the casserole dish. Sprinkle with the reserved 1 cup shredded cheese. Arrange the stuffing mixture on top.
  • Place the dish into the oven and bake for 40-45 minutes until bubbly around the edge and golden brown.
  • Let stand on the counter for 5 minutes then serve.

Notes

  • Chicken: You can use rotisserie chicken, roasted chicken, cooked boneless skinless chicken breasts or chicken thighs in the recipe.
  • Protein Substitution: You could use leftover Thanksgiving turkey for this recipe with no other adjustments needed.
  • Stuffing: You can crumble your own homemade stuffing or cornbread dressing over the top.
  • Soup: You can use cream of mushroom soup or cream of onion soup.
  • Cheese: The sky's the limit with the variety of cheese you can use. Classic sharp cheddar cheese adds flavor to the sauce but you could use colby jack, gouda or gruyere cheese.
  • Vegetables: You could use frozen peas and carrots, petite peas or steamed broccoli florets in place of mixed veggies.
