Cottage Cheese Egg Casserole

Ingredients

  • 1 lb pork breakfast sausage
  • 1 small sweet onion finely diced
  • 1 small red bell pepper seeded and diced
  • 12 large eggs
  • 1/3 cup half and half or whole milk
  • 1 4 oz can green chiles well drained
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 tsp seasoned salt
  • 1 1/2 tsp granulated garlic or garlic powder
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 Tbsp Dijon mustard
  • 1 6 oz package fresh baby spinach leaves chopped
  • 2 1/2 cups shredded sharp cheddar cheese divided use
  • 1 16 oz container cottage cheese small curd
  • 1/4 cup chopped fresh parsley plus additional for garnishing

Instructions

  • Preheat the oven to 350°F. Spray a 13×9-inch baking dish with nonstick cooking spray. Set aside.
  • In a small skillet cook sausage, onion and red bell pepper over medium-high heat until no pink remains. Drain excess grease from pan. Remove from the heat. Set aside to cool slightly.
  • In a large bowl, whisk together the eggs, cottage cheese, green chiles, Parmesan, half and half, seasoned salt, granulated garlic, black pepper, onion powder and Dijon mustard until fully combined. Add chopped spinach, stir to distribute.
  • Assemble: Layer the sausage mixture onto the bottom of the prepared baking dish. Top with 1 1/2 cups cheddar cheese.
  • Carefully pour the egg mixture over the sausage and cheese. Sprinkle the top with chopped parsley and reserved 1 cup cheese.
  • Transfer dish to the preheated oven. Bake for 40-50 minutes or until puffed and lightly golden brown and the center is set when gently shaken. (You can check it with a toothpick inserted into the center, too.)
  • Let stand for 5 minutes to settle, then slice and serve garnished with parsley or green onions.

Notes

  • Cheese - You could use any variety of shredded cheese or cheese blend, that you enjoy. Sharp cheddar cheese, gruyere cheese, monterey jack cheese, swiss cheese, mozzarella cheese or pepper jack cheese for a hint of spice.
  • Eggs - You could adapt this recipe using the equivalent of egg whites or combine the two using one half eggs and one half egg whites. Changing the eggs will change the volume.
  • Protein - You could swap out the sausage using ham or crispy bacon. You could also use chorizo sausage for a little heat, turkey sausage or turkey bacon.
  • Half and Half -  You could use heavy cream or whole milk.
  • Peppers - You could use yellow bell peppers, poblano pepper or jalapeno peppers.
  • Vegetables - You could add zucchini or sauté your favorite variety of mushrooms along with the sausage mixture. You could also add cherry tomatoes, cut in half. to the top of the egg cottage cheese casserole prior to sprinkling the final layer of cheese on top just before baking.
  • Fresh Herbs - You could use fresh chives or fresh basil.
  • Toppings - You can serve this egg casserole on toasted bread or a buttermilk biscuit as a breakfast sandwich. You could also serve it topped with sour cream, salsa or diced avocado.
