Coatings:
1cuppowdered sugar plus additional as needed
1/3cupgranulated sugar
1 1/2-2tspground cinnamon
Donuts:
2-4cupsvegetable oil or peanut oil
2 1/4cupsall purpose flour
1/3cupgranulated sugar
1Tbspbaking powder
1/2tspsalt
1/4tspground nutmeg

Instructions
In a Dutch oven over medium high heat heat 2-3 inches of oil to 355-365°F.
Prep the Sugar Coatings: In one shallow bowl place 1 cup powdered sugar. In a separate shallow bowl whisk together 1/3 cup granulated sugar with 1 1/2-2 teaspoons ground cinnamon. Set aside.
Make the Donuts: In a medium bowl, use a whisk to sift together flour, sugar, baking powder, salt and nutmeg.
In a separate medium bowl, whisk together milk, melted butter, vanilla and egg.
Add the wet ingredients to the dry ingredients and mix until fully moistened.
Use a small cookie or ice cream scoop (about 1 Tablespoon) to drop the batter into the hot oil. fry for 3-4 minutes turning for even browning. Fry until golden brown.
Have nearby a baking sheet pan lined with paper towels and fitted with a wire rack. Remove doughnut holes from the hot oil using a stainless steel spider or slotted spoon to the rack.
While doughnut holes are hot roll half in powdered sugar and half in cinnamon sugar. Roll twice for a heavier coating. Place back onto the wire rack.
Serve immediately with warm chocolate or caramel for dipping, if desired.
Notes
Adjust Cooking Time According to Size - Should you make larger doughnut holes, they'll need slightly longer to cook. A small ice cream scoop or cookie scoop is imperative for even sizing.
Jam Filled Donut Holes - You may opt to fill these doughnut holes with jam. To do so, use a piping bag inserted into the center to pipe a small amount (1/2 teaspoon) of any flavor of jam that you enjoy.
Chocolate - You can fill them with chocolate ganache or Nutella.
Lemon Curd or Lime Curd - Fill some of the donut holes with lemon or lime curd for a pop of citrus.
Easy HomemadeGlazed Donut Holes - You can also glaze these doughnuts. Mix together 1 cup powdered sugar with 3-4 Tablespoons of heavy cream and 1/2 tsp vanilla. You can thin further using water or additional cream. Dip the warm donut holes in the glaze then back onto the wire rack. This glaze recipe easily doubles if you want to glaze all of the doughnuts.
Oil - A neutral flavored oil works best for frying. Use vegetable oil or peanut oil. Skip olive oil, it's not a good choice for this recipe.
