Instructions
Preheat oven to 450°F. Line a medium size rimmed sheet pan with parchment paper.
Scrub potatoes and pat dry with paper towels. On a cutting board, center the potatoes between two chopsticks.
Use a sharp knife to cut thin slices approximately 1/4-inch wide being careful not to cut all the way through. (The chopsticks should prevent this from happening.)
Transfer to the parchment lined sheet pan.
In a small bowl whisk together oil, butter, salt, black pepper, granulated garlic, onion powder and 1 Tbsp Parmesan cheese Brush potatoes carefully with the butter mixture, separating the slices to fully coat. Sprinkle tops with additional 2 Tbsp Parmesan.
Bake for 50-60 minutes or until the potatoes are tender and the tip of a knife or a fork, easily insert into the center of the potatoes.
Serve immediately topped with sour cream, bacon and chives.
Notes
Utilize Chopsticks - The chopsticks will prevent you from cutting all the way through the potatoes when slicing. Don’t skip it or the potatoes won’t hold together.
Use Large Potatoes - The larger the potato the more slices you'll have which complements the look of the fanned slices. When in doubt, go larger rather than smaller. Choose oblong potatoes similar in size, for the prettiest presentation and even baking.
Salt - Use kosher salt, sea salt or table salt.
Why Use Butter and Oil? The combination will prevent the butter from burning while the potatoes roast in the oven.
Adjust Baking Time - The baking time may be adjusted depending on the size of the potatoes used. Test the centers with the tip of a knife or a fork, for doneness before removing from the oven.
Cheese - You can add cheese to these potatoes. Tuck thin slices of cheddar, Gruyère, or mozzarella between the cuts in the last 10 minutes of baking.
Garnish - You can sprinkle the tops with shredded cheese. too. To do so, sprinkle the tops with sharp cheddar cheese, gruyere cheese, mozzarella cheese or any variety of shredded cheese that you enjoy. Broil at the end of baking, just until melted.
Fresh Herbs - You can garnish these potatoes with fresh parsley, rosemary, fresh thyme or use green onions in place of chives.
Seasonings and Customizations - You may choose to sprinkle the potatoes with Everything Bagel seasoning or brush the potato slices with pesto halfway through baking to highlight Italian flavors. Add a splash of truffle oil to the butter-oil mixture for a gourmet twist.
