Home Fried Potatoes

Ingredients

  • 2-3 lbs russet potatoes scrubbed and cubed into 3/4-inch pieces
  • 1 large sweet or yellow onion diced
  • 4 Tbsp vegetable oil (OR bacon grease)
  • 2 Tbsp salted or unsalted butter
  • 2 tsp seasoned salt
  • 1 tsp black pepper
  • 1 tsp granulated garlic or garlic powder
  • green onions for garnishing (optional)

Instructions

  • Cut potatoes into 3/4-inch pieces. (Peel or peel intact)
  • Heat 2 Tbsp oil in a 12 inch cast iron skillet or a large, deep stainless steel skillet over medium-high. Add onions. Cook for 2 minutes just until softened and translucent then use a slotted spoon to remove them from the pan. Set aside.
  • Add the remaining oil and the butter to the skillet. Add the cubed potatoes, turning to coat. Cover and cook over medium-low for 15 minutes. Check and gently stir every 5 minutes.
  • Uncover and add the seasoned salt, black pepper, granulated garlic and onions tossing together until combined.
  • Cook 10 minutes longer uncovered, flipping potatoes every 5 minutes. Cook until the potatoes are tender on the inside and are browned on the outside.
  • Serve immediately garnished with green onions or parsley.

Notes

  • You can add diced bell peppers or mushrooms.
  • You can add diced ham, cooked bacon or breakfast sausage.
  • You could use bacon drippings in place of oil or butter.
