Stuffed Baked Potatoes

Ingredients

  • 2 large baking potatoes scrubbed and cleaned
  • 1 cup smoked pulled pork use more or less to your taste
  • 2/3 cup shredded colby jack cheese
  • 4 Tbsp unsalted butter plus additional as needed
  • 1/3 cups barbecue sauce use your favorite
  • 1/2 tsp salted adjust to taste
  • 1/2 tsp black pepper adjust to taste
  • 4 Tbsp sour cream
  • pickled jalapenos, chopped fresh chives or green onions for serving

Instructions

  • Preheat the oven to 450°F.
  • Wash and dry the potatoes and use a fork to poke holes on the top of the potatoes.
  • Place the potatoes on a rack that sits over a baking sheet and baste the potatoes with melted butter and sprinkle on all sides with salt and black pepper.
  • Bake for about 30 minutes, then baste the potatoes with more melted butter. Bake for another 25 minutes or just until fork tender.
  • Split the potatoes and lightly fluff the flesh inside of each potato with a fork.
  • Immediately place thin pats of butter on the inside of the potatoes and sprinkle with a bit more salt and pepper. (If you have leftover melted butter from basting the potatoes, use it!)
  • Assemble: Sprinkle the inside of each potato with half the shredded cheese. Spoon half the pulled pork on each potato. Drizzle with your favorite BBQ sauce.
  • Place the jalapenos on top of the bbq and drizzle sour cream over the top. Garnish with chopped chives, then serve and enjoy!

Notes

  • BBQ - I use pulled pork for these stuffed potatoes, but you can fill them with shredded barbecue beef, smoked turkey or barbecue chicken.
  • Potatoes - You can use another variety of potatoes like Yukon golds, or white potatoes. They all have varying starch content so adjust the baking time as needed.
  • Olive Oil - If you prefer, you could brush the potatoes with olive oil and skip basting with butter. When doing so, there's no need to baste the potatoes halfway thru baking, and use butter only on the inside of the potato when assembling.
  • Toppings - The amount of sour cream, bbq sauce, jalapenos, and salt, and black pepper is totally up to your personal preferences. You might also enjoy bacon or bacon bits, ranch dressing or crema in place of sour cream. 
  • Chives - You can top these potatoes with chopped green onions in place of chives.
  • Cheese - You can use your favorite cheese blend or flavor of shredded cheese in place of the kind I used. I tend to use whatever I have on hand, so suffice it to say you could use pepper jack, medium cheddar or colby jack cheese instead.
  • Barbecue Sauce - For the best result, you have full control over which sauce to use. It's important to use your favorite BBQ sauce for this recipe as it will have a strong flavor presence.
  • Adjust the Servings - If you'd like to make stuffed baked potatoes for a crowd, you can adjust the amounts for the servings you need very easily.
  • Baking the Potatoes Timesaver - You can cook the potatoes in the microwave and assemble these potatoes in minutes. You can use your favorite method for baking the potatoes, it doesn’t have to be the oven. This is totally up to you.
