Ingredients

  • 4 cups cubed apples i.e. Granny Smith peeled, cored and cut into 1/2-inch cubes
  • 1/3 cup granulated sugar
  • 2 Tbsp fresh lemon juice
  • 1 tsp apple pie spice or ground cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 Tbsp cornstarch dissolved in cold water to thicken optional

Instructions

  • Peel, core and cut apples into 1/2-inch cubes.
  • Add apples to a medium saucepan. Add granulated sugar, apple pie spice, lemon juice and salt.
  • Simmer the apple mixture over medium-low heat for 20 minutes or just until tender.
  • Remove the pan from the stove and add the vanilla extract. Stir to combine.
  • Optional Cornstarch Slurry to Thicken: Depending on your desired texture, at this point you can thicken the cooking liquid using a cornstarch slurry. Stir together 1 Tbsp of cornstarch with 2 Tbsp cold water, until dissolved.
  • Return the pot to the stovetop over low heat. Stir the cornstarch slurry into the apples, mixing thoroughly, Repeat this process as needed until your desired thickness is reached.
  • Serve warm over pancakes, waffles, ice cream, or as a side dish for breakfast, with pork chops or chicken.
