Ingredients

  • 1 lb pork breakfast sausage
  • 1 Tbsp butter
  • 8 large eggs
  • 2 Tbsp sour cream or milk
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 12 count package of slider rolls i.e. Sara Lee Artesano Bakery Rolls, Pepperidge Farm, King's Hawaiian or similar
  • 4 Tbsp salted or unsalted butter melted
  • 2 Tbsp pure maple syrup
  • 10 slices cheddar or colby jack cheese
  • fresh chives for garnishing

Instructions

  • Cook the sausage in a large skillet over medium high heat for 5-8 minutes or until browned and no pink remains. Remove from the skillet to a paper towel lined plate to drain. Wipe skillet clean with a paper towel.
  • Add 1 Tbsp butter to the skillet over medium heat to melt. In a medium bowl whisk the eggs with sour cream, salt and black pepper. Pour into the skillet.
  • Cook over medium heat for 3 minutes or until soft scrambled. Remove from the heat and set aside to cool.
  • Assemble: Preheat the oven to 350°F. Line a sheet pan with parchment paper.
  • Separate the top from the bottom of the slider rolls, using a sharp knife to slice through the middle. Place bottom half onto the sheet pan.
  • In a small bowl mix together the butter and maple syrup. Brush some lightly on bottom half of rolls.
  • Arrange 5 slices of cheese on bottom half of slider rolls. Top with scrambled eggs then cooked sausage. Cover sausage with remaining 5 slices of cheese.
  • Brush cheese sliced with maple butter then place rolls on top. Brush on top and sides with reserved butter-syrup mixture. Sprinkle with sesame seeds, if desired.
  • Lay a piece of aluminum foil loosely on top. Bake for 20 minutes, then remove foil. Bake for another 5 minutes until the cheese has melted.
  • Cut apart and serve immediately garnished with chives.
