Cinnamon Sugar Almonds

Ingredients

  • 1/2 Tbsp softened butter
  • 4 cups whole blanched almonds
  • 1 large egg white
  • 1 Tbsp pure vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 250°F. Butter the bottom and sides of a 15x10x1.5-inch jelly roll pan.
  • In a medium-size mixing bowl using an electric mixer, beat together the egg white and vanilla extract on medium-high speed for 2-3 minutes or until the egg white has expanded and looks creamy and light beige in color.
  • Add the almonds to the mixing bowl. Stir to evenly coat the almonds with the beaten egg white.
  • Pour the granulated sugar, brown sugar, cinnamon and salt into a large plastic storage bag. Seal the bag and shake to combine.
  • Drop the egg white coated almonds into the cinnamon-sugar mixture.
  • Seal the bag and shake until the almonds are coated on all sides.
  • Pourthe almonds onto the prepared pan and spread in a single layer. 1 hour stirring every 15 minutes.
  • Bake for 1 hour stopping to stir every 15 minutes. Spread on wax paper and cool completely.
  • Store tightly covered at room temperature for up to 1 month.

Notes

  • Egg White: The egg white is what makes the cinnamon sugar stick to the almonds. When whipping the egg white patience is key. It takes a few minutes for it to expand and firm up. You don't have to worry about over beating in this instance as you would when making a cake or cookie batter. It does need to be done with a mixer, a whisk just doesn't get the job done.
  • Nuts: This recipe will work with other varieties of nuts, too. You can use walnuts, peanuts, hazel nuts, macadamia nuts, cashews or pecans. Checkout my Candied Cinnamon Sugar Pecans recipe here. 
  • Spice: You could add a dash or two of ground nutmeg or use pumpkin pie spice, which includes ginger, to expand the flavor profile.
  • Serving Options: These candied almonds are terrific for sharing at Christmas, sweet snacking on their own or for chopping and using as a garnish on ice cream, desserts and cookies. You can also scoop them into a cellophane bag, tie the top with a pretty ribbon and give them as an appreciation gift to the kids teachers, friends, and neighbors.
  • Blanched Almonds: Blanched almonds are unsalted and readily available at most grocery stores and big box stores like Walmart, Sams and Costco.
