Instructions
In a small saucepan over medium-high heat cook together the preserves, brown sugar, 1/2 cup apple cider, Dijon and allspice. Bring to a boil then cook for 3 minutes or until the sugar has melted.
Spray the inside of a 6 quart oval slow cooker with cooking spray.
Place the spiral ham in the slow cooker cut side down. (Make sure the ham you purchase fits into your slow cooker with the lid on.) Pour the remaining apple cider over the ham.
Use a basting brush to slather the ham liberally with pineapple glaze between each slice and on the exterior. Reserve about 1/4 cup to brush on at the end.
Lock the lid in place. Cook ham on low for 4-6 hours or until it reaches 140°F internal temperature on a meat thermometer. Adjust the time based on the size of the ham.
Remove to a platter and brush with remaining glaze. (Optional) You can also transfer to a baking pan to broil and char the glaze in the oven, if desired.
Notes
Optional: At the end of slow cooking you can char further by placing onto a baking sheet and broiling in the oven to char the glaze, if desired.
Pineapple Preserves Substitution: You can use orange marmalade, apple jelly or apricot preserves in the same amount in place of pineapple preserves.
Make Your Own: In a pinch, you can also combine one 8 ounce can of crushed pineapple with 1/4 cup of granulated sugar. Simmer in a small saucepan on the stovetop for 15-20 minutes or just until slightly thickened, to replace the pineapple preserves.
Honey: You can replace the brown sugar in the glaze with honey. When doing so, expect the glaze to be thinner. You can thicken the sauce with cornstarch slurry, if needed.
Juice Substitution: You can use apple cider, apple juice, orange juice or pineapple juice.
