In a 10-inch cast iron skillet or similar over medium-high cook the light brown sugar, melted butter, corn syrup, cinnamon and salt together. Bring to boil and then allow to bubble over medium-high for 1 minute until the sugar has completely dissolved. Remove from the heat and add the vanilla extract. Stir to fully combine.
Sprinkle the pecans into the caramel mixture. Stir until the pecans are coated and evenly distributed in the caramel sauce.
Separate the rolls and arrange top side down over the caramel sauce gently pressing into the caramel.
Place the rolls into the oven and lay a piece of foil loosely on top. Bake in the preheated oven for 25 minutes.
Carefully invert onto a serving platter allowing the skillet to sit inverted for 1 minute or until all of the caramel has released from the skillet and drizzled down the sides of the rolls.
Serve immediately.
Notes
Brown Sugar - You can use dark brown sugar for the caramel sauce for a stronger molasses flavor.
Nuts - You could make these sticky rolls using walnuts, hazelnuts or almonds.
Double the Recipe - You can make these in a 13-inch pan, if you need more servings.
Spice - You could add a pinch of nutmeg in addition to the cinnamon for a warm spicy flavor.
Do I Have to Bake Sticky Rolls in a Skillet? If you don't have a cast iron skillet, no worries. You could make the caramel sauce in a heavy bottomed saucepan and pour it into an 8-inch or 9-inch cake pan or baking dish, if preferred.
Arrange the Rolls in the Pan Upside Down - The rolls are placed into the pan upside down so when they're inverted onto a serving platter, they're right side up.
Lay Foil on Top - When baking, lay a piece of aluminum foil on top then place into the oven to bake until the rolls are warm and lightly toasted.
Remove from the Skillet - Invert onto a serving plate and be patient. It takes a minute or two for the caramel to fully release from the pan. Allow ample time so the caramel drizzles down the sides to coat each roll with the thick, rich, caramel pecan sauce.
How to Serve - These gooey caramel pecan sticky rolls are versatile and could easily be served as a dessert with a generous dollop of fresh whipped cream or a scoop of vanilla ice cream at the end of any meal. Serve them for breakfast with a side of eggs, bacon and fresh fruit.
