Ingredients

  • Hash Brown Crust:
  • 1 20 oz package refrigerated shredded hash brown potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp garlic salt or teaspoon salt and garlic powder
  • 1/4 tsp onion powder
  • 1 large egg beaten
  • Cheeseburger Filling:
  • 4 slices bacon
  • 1 medium sweet onion diced
  • 1 1/2 lb extra lean ground beef
  • 2 tsp steak or hamburger seasoning more or less to your taste
  • 2 Tbsp Worcestershire sauce
  • 1/2 cup panko bread crumbs
  • 1/2 cup ketchup
  • 1 Tbsp mustard
  • 2 large eggs beaten
  • 2 cup shredded sharp cheddar cheese divided
  • 12 dill pickle chips pat dry with a paper towel

Instructions

  • Preheat the oven to 375°F and spray a 9-inch deep dish pie plate with cooking spray.
  • Crust: In a medium size bowl, stir together hash browns, cheese, garlic salt, onion powder and egg.. Mix well. Press onto bottom and sides of pie dish. Bake for 15 minutes. Remove from oven and set aside. Lower oven temperature to 350°F.
  • Meanwhile, cook the bacon until crisp in a large skillet. Remove with a slotted spoon to paper towels to drain and crumble. Reserve 2 Tbsp drippings in pan.
  • Add onion to drippings, cooking for 2-3 minutes over medium-high until translucent. Season with salt and black pepper to your taste.
  • Add ground beef to onion mixture. Cook until no pink remains. Drain excess fat from the pan. Season with hamburger seasoning or steak seasoning, add Worcestershire sauce. Stir to combine then remove from the heat.
  • To the beef mixture add panko breadcrumbs, ketchup, mustard, 1 cup of shredded cheese, crumbled bacon and beaten eggs. Mix well.
  • Pour filling into hash brown pie crust, spread evenly. Arrange dill pickles on top. Sprinkle with remaining cheddar cheese.
  • Bake for 35-40 minutes or until set and edges are golden brown. Rest for 5 minutes before cutting.
  • Serve with an additional drizzle of mustard and ketchup, if desired.

Notes

  • Protein Substitutions - You could use ground turkey, ground pork or ground chicken in place of ground beef.
  • Hash Browns - You could use frozen hash browns in a pinch but they have more moisture. Thaw the hash browns and squeeze them in a lint free kitchen towel to remove excess liquid.
  • Use Refrigerated Hash Browns for Less Moisture - For this bacon cheeseburger pie, I thought it would be fun to start with a shredded potato hash brown crust so we skip the bun and pastry crust. Refrigerated hash browns work best.
  • Make-Ahead Tips - You can fry and prep the bacon in advance and hold onto the drippings storing in the fridge. You can adjust the amount of bacon to suit your taste. You can also make the ground beef mixture one day in advance, then assemble the pie just before baking.
  • Low-Carb Carnivore Pie - For those on a high protein, carnivore diet, you can omit the potato crust and breadcrumbs in the filling for a lower carb option. You'll need to use sugar free ketchup and add one extra egg to bind the filling. If you have keto bread or crackers, you can use those to replace the bread crumbs.
  • Butter - For extra decadence, you can grease the pie pan with softened butter prior to pressing the hash brown mixture into the pan.
  • Serving Suggestions - We like this cheeseburger pie with a simple lettuce and tomato salad on the side.
  • Cheese - I use classic cheddar cheese in this meat pie in keeping with the flavors of a cheeseburger. You an adapt using whatever cheese you like or have on hand. Pepper jack cheese for spice, Swiss cheese, colby jack cheese or even mozzarella cheese.
